Instant Pot Refried Beans

Another delicious and simple side to enjoy with your favorite Mexican dishes. Can be made in the Instant Pot or Slow Cooker.

Start out by soaking your beans for 6-8 hours.

Turn Instant Pot to “Sauté” mode. Add 2 Tbsp oil or butter to the pot and allow it to heat up. Saute the onions and garlic for 2-3 minutes. Add the rest of the ingredients to the Instant Pot.

Close the lid and cook on HIGH pressure for 60 minutes. When it’s finished, allow a natural pressure release before releasing the rest of the pressure.

Drain all but 1 cup of liquid from the beans and blend with an immersion blender or mash by hand. Add more liquid until you reach your desired consistency. Adjust seasonings as needed.

YUM! There were no leftovers from this batch, my kids ate all of it! haha!

Try it with some Instant Pot Mexican Rice! Or Some Homemade Colorado Green Chili

Ingredients

-2 Cups pinto beans

-5 Cups Chicken BrothChicken BrothChicken Broth

-1 yellow onion diced

-4 cloves garlic minced

-1 can diced green chiles

-1 Tsp Salt

-1 Tsp Pepper

-1 Tsp Cumin

-1 Tsp Chili Powder

-1 Tsp Oregano

-1 Tsp Paprika

-2 Tbsp butter/olive oil

 

 

Directions

  • To make in a slow cooker: add all of the ingredients to a slow cooker and cook on low for 8 hours or high for 4-5 hours. Drain and blend.
