Instant Pot Cilantro Lime Chicken with Black Beans and Rice

Grab the ingredients you’ll need and let’s go!

Start out by zesting and juicing the limes and set aside. Chop the onion and garlic. Then dice the chicken breast and season with seasonings.

Turn the Instant Pot to sauté mode. Add the olive oil or butter once the pot is hot.

Sauté the onion and garlic for 1-2 minutes before adding the chicken.

Cook the chicken until brown, then Add the rice, chicken broth and lime juice and zest.

Close the lid and turn the knob to sealing. Cook on HIGH pressure for 8-10 minutes. While that is cooking, Wash and Chop the cilantro and set aside. Then drain and rinse the beans and warm them on the stove or in the microwave.

When the 8-10 minutes is up, quickly release the pressure and then add the cilantro and black beans and stir. Add more lime juice and seasonings as needed.

Ingredients

-2 lbs chicken diced

-2 Tbsp olive oil or butter

-1/2 onion diced

-4 cloves garlic minced

-1/3 cup lime juice (2 limes)

-2 Tbsp lime zest

-2 cups white rice

-3 cups chicken broth

-1 15oz can black beans drained and rinsed

-1/2 cup cilantro chopped

-1/2 tsp salt

-1/2 tsp pepper

-1/2 tsp cumin

-1/2 tsp chili powder

 

 

 

Directions

  1. Zest and juice the limes and set aside. Chop the onion and garlic. Dice the chicken breast and season with seasonings.
  2. Turn the Instant Pot to sauté mode. Add the olive oil or butter once the pot is hot. .  Sauté the onion and garlic for 1-2 minutes before adding the chicken. Cook the chicken until brown, then Add the rice, chicken broth and lime juice and zest.
  3. Close the lid and turn the knob to sealing. Cook on HIGH pressure for 8-10 minutes. (I’m at high altitude so 10 is perfect for me, but 8 might work better for you :)) While that it cooking, Chop the cilantro and set aside. Then drain and rinse the beans and warm them on the stove or in the microwave.
  4. Quickly release the pressure then add the cilantro and black beans and stir. Add more lime juice and seasonings if needed.
  5. Enjoy! 😊 YUM!!!!

    Very good! I made it just as written and cooked for 8 minutes and glad I did since the chicken would have overcooked. Don’t expect fluffy rice, this turned out more like a casserole, which was fine for me. You can add any condiment you feel like when served. I topped with shredded cheese and think sour cream would be good. Would make a good base for a burrito bowl too. I’ll make it again. It was easy and economical.
