Air Fried Pickles

I’m back with another amazing Air Fryer recipe! If you’re new here and have never heard of an Air Fryer, check out my favorite Air Fryer Oven on Amazon:

An Air Fryer is basically a tiny oven that requires less oil to “fry” the food you cook. I’m obsessed with mine, I use it to make everything from potatoes, (think the crispiest fries you’ve ever had) to chicken and everything in between. Anything you can prepare in the oven you can prepare in the air fryer in less time and using less oil.

Another thing I’ve discovered is delicious in the Air Fryer is Fried Pickles. They are so simple to make, and addicting! I made these live on my Facebook page check out the video below 🙂

To begin, grab your favorite jar of pickles from the store. This recipe will work for any kind of pickle, spears or chip shaped. You can also use this recipe to fry zucchini as I did here.

You’ll also need flour, eggs and seasoned breadcrumbs, and your favorite Air Fryer.

Begin by dipping each pickle in flour, then eggs, then breadcrumbs. Continue until all of the pickles are breaded.

Preheat the Air Fryer to 400 degrees. Then bake the pickles at 400 degrees for 10 minutes. I recommend flipping the pickles halfway through.

Serve with your favorite dipping sauce and enjoy!

  • 1 cup Flour
  • 4 Eggs (whisked)
  • 2 cups Bread Crumbs (seasoned)
  1. Begin by dipping each pickle in flour, then eggs, then breadcrumbs. Continue until all of the pickles are breaded.

  2. Preheat the Air Fryer to 400 degrees. Then bake the pickles at 400 degrees for 10 minutes. I recommend flipping the pickles halfway through.

  3. Serve with your favorite dipping sauce and enjoy!

Air Fryer Avocado Egg Rolls

I’m back with another delicious and healthy Air Fryer recipe. I whipped these Avocado Egg Rolls up yesterday and we enjoyed them by the pool with family. They were a huge hit!

If you’ve never used an air fryer before I highly recommend them! I love how it works! It is perfect for so many things, including these simple Air Fryer Chicken Tenders with Air Fryer French Fries. (You’ll never make french fries another way, I promise.) It is also a healthier alternative to frying with oil.

Not only does the air fryer cook food quickly and efficiently, it can bake, roast, grill or fry pretty much anything you can think of.

There are several different brands and sizes available which makes choosing the perfect one for you, that much easier. I have added the top 4 selling Air Fryers on Amazon right now, including the Ninja Air Fryer, which is the one I used for this recipe.

These Avocado Egg Rolls are so simple to make in the Air fryer and I’ve included recipes for two different dipping sauces. Start out by chopping all of the ingredients and combine them in a bowl.

Mix well, mashing the avocados just a little bit as you go.

Add about two tablespoons of the avocado mixture to the corner of an egg roll wrapper.

Fold corner over the filling and roll the egg roll once.

Fold each side in and continue rolling the egg roll.

Dab the final corner with water so that it seals.

Repeat until all of the egg rolls are filled.

Preheat the Air Fryer to 350 degrees for 5 minutes before adding the egg rolls. Spray each egg roll with olive oil.

Cook at 350 degrees for 8-10 minutes turning half way.

While the egg rolls are cooking, prepare the sauces by combining all of the ingredients.

Serve and enjoy!

Air Fryer Avocado Egg Rolls

A healthy and delicious snack made in the Air Fryer.

Avocado Egg Rolls

  • 3 Avocados (peeled and diced)
  • 8-10 Grape Tomatoes (chopped)
  • 1/4 Cup Red Onion (diced)
  • 2 cloves Garlic (minced)
  • 1/4 Cup Cilantro (chopped)
  • 3 TBSP Lime juice
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Cumin
  • 1/2 tsp Chili Powder
  • 12 Egg roll wrappers

Cilantro Lime Sauce

  • 1/4 Cup Cilantro (chopped)
  • 1/2 Cup Honey
  • 1/4 Cup Olive Oil
  • 2 TBSP Lime Juice
  • 2 Cloves Garlic (minced)
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper

Sweet Chili Lime Sauce

  • 1/4 Cup Cold Water
  • 1/4 Cup Lime Juice
  • 1 tsp Siracha
  • 1 tsp Red Chili Flakes
  • 1 TBSP Cornstarch
  • 2 Cloves Garlic (Minced)
  • 1 tsp Salt
  • 1/2 Cup Sugar

To Prepare the Egg Rolls:

  1. Chop all of the ingredients and combine in a bowl. Mix well.

  2. Add about two tablespoons of the avocado mixture to the corner of an egg roll wrapper.

  3. Fold corner over the filling and roll the egg roll once.

  4. Fold each side in and continue rolling the egg roll.

  5. Dab the final corner with water so that it seals.

  6. Repeat until all of the egg rolls are filled.

Instant Pot Mexican Quinoa

Hey everyone! I’m back with another AMAZING and delicious Instant Pot recipe!

If you’re new here, or have never used an Instant Pot before, be sure to check out my tutorial at Instant Pot 101!

This dish is so simple and packed with flavor and nutrition. With 13 grams of protein per 1 cup serving, I’m happy to give it to my sons who always gobble it up!

Make sure to rinse the quinoa well before starting to prevent the quinoa from splitting.

Feel free to swap the seasonings for taco seasoning, or use cumin, chili powder, garlic powder, onion powder, oregano, salt and pepper.

I’ve included a video tutorial below so you can see just how easy this dish is to make in the Instant Pot!

Instant Pot Mexican Quinoa

A simple and flavor packed side dish made in the Instant Pot.

  • 1 TBSP Olive Oil
  • 1 Onion (diced)
  • 4 cloves Garlic (minced)
  • 1 cup Quinoa (rinsed)
  • 1 cup Chicken Broth
  • 1 can Diced Tomatoes
  • 1 can Black Beans
  • 1 can Green Chiles (4 oz)
  • 1 TBSP Cilantro (chopped)
  • 1 TBSP Green Onions (chopped)
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Oregano
  • 1 TBSP Lime Juice
  1. Turn the Instant Pot to Saute mode and allow it to heat up before adding the olive oil.

  2. Add the diced onions and garlic and cook for 3-4 minutes before adding the rinsed quinoa, diced green chiles, tomatoes, beans, chicken broth and seasonings. Stir well.

  3. Close the lid, turn the venting knob to sealing and cook at high pressure for 1 minute. When the timer is up, allow the pressure to release naturally for 10 minutes before releasing the rest of the pressure.

  4. Fluff the quinoa with a fork, add lime juice, cilantro and green onions then serve.

  5. Enjoy!

Instant Pot Chicken Enchiladas

It has been WAY to long since I have posted an Instant Pot recipe and after a recipe request, here we are!

We had these Chicken Enchiladas last night and they were delicious. They may not look pretty but the flavor is out of this world. Both of the boys absolutely loved them.

Season the chicken with taco seasoning, then add 1 Can of enchilada sauce to the instant pot along with the diced onion, garlic and chicken breasts. Reserve the second can of enchilada sauce for a later step.

Put the lid on the Instant Pot and turn the venting knob to sealing. Push the “manual” or “pressure cook” button and adjust the time to 15 minutes. When the timer goes off allow the pressure to release naturally for 10 minutes before releasing the rest of the pressure by carefully turning the venting knob to venting. 

Shred the chicken and get ready to assemble the enchiladas. Spray the bottom of a pan with cooking spray.

This is the pan I love off of Amazon, it’s great because you can use it by itself or stacked to cook more than one batch of enchiladas or whatever you’re making. 🙂

Tear two corn tortillas in half and layer the bottom of the pan. Add a spoonful of enchilada sauce to the tortillas. 

Add a layer of chicken, then a layer of shredded cheese. Continuing these steps, add two more layer and finish with a layer of tortillas, enchilada sauce and cheese.

Add 1 cup of water to a clean instant pot inner pot. Cover the pan with aluminum foil, place the pan on a trivet and place into the instant pot. 

Put the lid on the Instant Pot and turn the venting knob to sealing. Push the “manual” or “pressure cook” button and adjust the time to 15 minutes. When the timer goes off quickly release the pressure by carefully turning the venting knob to venting. 

Allow the enchiladas to cool for 10 minutes before serving. 

**Note: you can use precooked chicken instead of raw. Just warm the chicken in a pan with taco seasoning and enchilada sauce then continue with the rest of the steps.

Instant Pot Chicken Enchiladas

Simple and delicious chicken enchiladas made in the instant pot. 

  • 1 pound Chicken Breasts
  • 1 Onion (diced)
  • 4 cloves Garlic (minced)
  • 2 cans Green Enchilada Sauce (mild)
  • 1 can Diced Green Chiles
  • 1 1/2 cups Shredded cheese (Mexican blend)
  • 8 Corn Tortillas
  • 2 TBSP Taco Seasoning
  1. Season the chicken with taco seasoning, then add 1 Can of enchilada sauce to the instant pot along with the diced onion, garlic and chicken breasts. Reserve the second can of enchilada sauce for a later step.

  2. Put the lid on the Instant Pot and turn the venting knob to sealing. Push the “manual” or “pressure cook” button and adjust the time to 15 minutes. Air Fryer Southwestern Egg Rolls

Another day, another Air Fryer recipe to try!

This one is especially delicious! These Southwestern Egg Rolls will please just about any crowd and are perfect for a party or get together…. or for a Saturday afternoon when you lack self control and eat almost all of them. Ok, I did have some help from the boys. 🙂 This recipe makes 20 egg rolls with some filling left over to snack on during the process, ha!

I will drop an oven recipe below if you don’t have an Air Fryer!

Start out by dicing an onion, mincing 4 cloves of garlic and chopping 1/3 cup of cilantro. Then heat up a large pan, add one tablespoon of oil and the onions. Saute until translucent.

Add garlic and spinach and cook until spinach is wilted, 1-2 minutes. 

Add the remaining ingredients aside from the egg roll wrappers and stir to combine. 

To assemble the egg rolls: add filling to one corner of the wrapper. Fold the corner over the filling and roll once. 

Fold each side in towards the middle. 

Continue to roll the egg roll up. 

Wet the remaining corner of the egg roll wrapper with a small amount of water to help seal the egg roll. 

Continue until you have filled all of the egg rolls. There may be some filling left. 

Preheat the Air Fryer to 375 degrees for 3 minutes before adding the egg rolls. 

Working in batches, spray the egg rolls with a little bit of oil and then cook them for 8-9 minutes flipping after 4 minutes.

**If you don’t have an Air Fryer, bake the egg rolls in a preheated oven at 425 degrees for 10-15 minutes. **

Serve with guacamole, sour cream, or salsa and enjoy! 🙂

Delicious southwester egg rolls made in the Air Fryer. Perfect appetizer for any event!

  • 1 Package Egg Roll Wrappers (20 count)
  • 1 Yellow Onion (Diced)
  • 4 cloves Garlic (Minced)
  • 1 can Corn (drained)
  • 1 can Black Beans (drained)
  • 1 can Green Chiles (4 oz, drained)
  • 2 cups Spinach
  • 1 cup Cheese (Mexican blend)

These Chicken Fajitas only have 6 ingredients and are SO simple to make. Let’s get started!

Start by chopping the onion and bell peppers into strips, then mince the garlic. 

Slice chicken into strips and remove fat.

Toss Chicken with bell peppers, onions, garlic, olive oil and taco/fajita seasoning. 


Preheat Air Fryer at 375 degrees for at least 3 minutes before adding the chicken and fajita veggies.



Cook the chicken fajitas at 350 degrees for 20-25 minutes. Make sure to stir the food every 5 minutes to ensure that it cooks evenly. 

Serve in your favorite tortilla or try these homemade tortillas!

Top with your favorite toppings and enjoy!

Simple and delicious fajitas made in the Air Fryer! 

  • 1 Pound Chicken Breasts

  5. Cook the chicken fajitas at 350 degrees for 20-25 minutes. Make sure to stir the food every 5 minutes to ensure that it cooks evenly. 

  6. Serve in your favorite tortilla or try these homemade tortillas! Enjoy!

Air Fryer French Fries

It’s me, I’m back again for another Air Fryer recipe!

I seriously can’t get enough of this thing…. and what’s this? Crispy french fries without deep frying in a ridiculous amount of oil?? Oh yes, it’s a real thing and they are so simple to make in the Air fryer!

I love my Ninja Air Fryer but there are several to choose from making it easy to find one you love!

Grab a few potatoes, because I’m about to show you how to make the best french fries you’ve ever had!

Wash and slice the potatoes, then add them to a bowl with ice water and let them soak for 30 minutes. 

Drain the potatoes and toss with olive oil, salt and pepper. Feel free to spice them up any way you want! Preheat the Air fryer to 375 degrees for at least 3 minutes. Add the potatoes to the air fryer and cook for 20-25 minutes. Be sure to shake the basket and/or mix the fries every 5 minutes to make sure they cook evenly. 

Add additional time as needed to crisp them up to your liking! Serve these with your favorite dish such as some Air Fryer Chicken Tenders, or by themselves because they are just THAT GOOD!

You will never make french fries another way after trying these!

  • 4 Potatoes (large)
  • 2 TBSP Olive oil
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  1. Wash and slice the potatoes, then add them to a bowl with ice water and let them soak for 30 minutes. 

  2. Drain the potatoes and toss with olive oil, salt and pepper. Feel free to spice them up any way you want! 

  3. Preheat the Air fryer to 375 degrees for at least 3 minutes. Add the potatoes to the air fryer and cook for 20 minutes. Be sure to shake the basket and/or mix the fries every 5 minutes to make sure they cook evenly. 

  4. Add additional time as needed to crisp them up to your liking!

After using the Air Fryer to make these chicken tenders, I’m not sure I’ll ever make them another way again! They are super simple to make!

Start by gathering your ingredients, slice the chicken breasts into strips of your desired size. They do not have to be perfect, they’ll still taste delicious! Season the chicken with salt and pepper.

Mix the bread crumbs and seasonings together in one bowl, whisk the eggs in another bowl and add the flour to a third bowl.

Coat each piece of chicken in flour, then dip in the egg mixture and finally into the bread crumbs.

Preheat the air fryer to 350 degrees for at least 3 minutes, then carefully add the pieces of chicken. Don’t overcrowd the basket, this will prevent the chicken strips from cooking evenly.

Cook the chicken strips at 350 degrees for 12 minutes, turning over after the first 6 minutes.

Work in batches until all of the chicken tenders are cooked.

Serve with your favorite dipping sauce and sides. We love having these with Air Fryer French Fries! You’ve got to try them! 🙂

Air Fryer Chicken Tenders

The most delicious chicken tenders you will ever make, thanks to the Air Fryer! 

  • 4 Chicken Breasts
  • 3 Eggs
  • 1.5 Cups Breadcrumbs
  • 1 Cup Flour
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Paprika
  • 1/2 tsp Oregano
  1. Start by gathering your ingredients, slice the chicken breasts into strips of your desired size. They do not have to be perfect, they’ll still taste delicious! Season the chicken with salt and pepper. 

  2. Mix the bread crumbs and seasonings together in one bowl, whisk the eggs in another bowl and add the flour to a third bowl. 

  3. Coat each piece of chicken in flour, then dip in the egg mixture and finally into the bread crumbs.

  4. Preheat the air fryer to 350 degrees for at least 3 minutes, then carefully add the pieces of chicken. Don’t overcrowd the basket, this will prevent the chicken strips from cooking evenly. 

  5. Cook the chicken strips at 350 degrees for 12 minutes, turning over after the first 6 minutes. 

  6. Work in batches until the chicken strips are all cooked. Serve with your favorite dipping sauce and sides. We love having these with Air Fryer French Fries!

Oh my gosh! This is one of my favorite meals to make in the Instant Pot. It’s super simple and protein packed, and you can easily double or triple the recipe for lots of leftovers or food prep for the week!

My kiddos beg for this meal which makes me a happy mama!

Which Instant Pot is best?

Instant Pot 101: Tips, Tricks and Must-Have Accessories.

Grab 1-2 lbs of chicken breasts, 1 onion (diced), 4 cloves of garlic minced, 1 can of tomatoes, 1 can of diced green chiles (you can substitute Rotel) 1 can of Black beans, and 1 can of corn if you’d like.

These are the seasonings you will need:

Add all of the ingredients to the Instant Pot and stir.

Close the lid, turn the venting knob to sealing and cook on HIGH pressure for 25 minutes.

When the timer is up, allow the pressure to release naturally. This can take anywhere from 20-45 minutes, you will know that all of the pressure has released when the silver pin drops. Only then will you be able to open the lid.

Open the lid carefully and shred the chicken.

Serve over some Instant Pot Mexican Rice or Instant Pot Cilantro Lime Rice or in a tortilla and top with your favorite toppings.

-1/2 tsp paprika

-pinch of cilantro leaves (optional)

-pinch of cayenne pepper (optional)

Directions

  1. Add all of the ingredients to the instant pot and mix well.
  2. Close the lid, turn the venting knob to sealing and cook on HIGH pressure for 25 minutes.

Instant Pot Posole

Mmmmm… Posole 😉 One of my favorite things to eat! It’s SUPER easy to make in the Instant Pot and the kids even loved it! 

Paired with some Homemade Tortillas, what could be better?! 

If you’re new to the Instant Pot start here: 

Instant Pot 101
Here’s what you’ll need: 



For the seasonings:

  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 2 tsp oregano
  • 2 tsp chili powder
  • 1 bay leaf

Start out by turning the Instant Pot to sauté mode and allow it to heat up. Add 2 TBSP of olive oil before adding the diced onion and garlic. Sauté for 2-3 minutes. 


Add the diced pork, chicken broth, green chiles, Hominy and the seasonings. 

Close the lid, turn the venting knob to sealing and cook on HIGH pressure for 30 minutes. Quickly release the pressure when it’s finished. 

Turn the Instant Pot back to sauté mode. Mix 2 TBSP of corn starch with 2 TBSP of cold water and add it to the Posole. Allow it to thicken for about 10 minutes. 

Top with cilantro and lime wedges and serve! YUM!

A delicious Pressure Cooker recipe for this Mexican Soup.

Ingredients

-1-2 lb pork roast diced

-1 onion diced

-6 cloves garlic minced

-1 25 oz can Hominy

-1 4oz can diced green chiles

-5 cups chicken broth

-1 tsp salt

-1 tsp black pepper

-1 tsp cumin

-2 tsp oregano

-2 tsp chili powder

-1 bay leaf

-2 TBSP corn starch

-2 TBSP cold water

For Garnish (optional)

-1/4 cilantro chopped

-lime wedges

Directions

1.Dice the onion and mince the garlic. Turn the Instant Pot to sauté mode and allow it to heat up. Add 2 TBSP of olive oil then sauté the onion and garlic for 2-3 minutes. 

2.Add the chicken broth, pork, hominy, green chiles and seasonings and stir.

3.Close the lid turn the venting knob to sealing and cook on HIGH pressure for 30 minutes before quickly releasing the pressure. 

4.Turn the Instant Pot back to sauté mode. Mix the 2 TBSP of corn starch with 2 TBSP of cold water and add to the posole. Allow it to thicken for 10 minutes. Top with cilantro and lime wedges and serve! Yum!
