Air Fryer Avocado Egg Rolls

I’m back with another delicious and healthy Air Fryer recipe. I whipped these Avocado Egg Rolls up yesterday and we enjoyed them by the pool with family. They were a huge hit!

If you’ve never used an air fryer before I highly recommend them! I love how it works! It is perfect for so many things, including these simple Air Fryer Chicken Tenders with Air Fryer French Fries. (You’ll never make french fries another way, I promise.) It is also a healthier alternative to frying with oil.

Not only does the air fryer cook food quickly and efficiently, it can bake, roast, grill or fry pretty much anything you can think of.

There are several different brands and sizes available which makes choosing the perfect one for you, that much easier. I have added the top 4 selling Air Fryers on Amazon right now, including the Ninja Air Fryer, which is the one I used for this recipe.

These Avocado Egg Rolls are so simple to make in the Air fryer and I’ve included recipes for two different dipping sauces. Start out by chopping all of the ingredients and combine them in a bowl.

Mix well, mashing the avocados just a little bit as you go.

Add about two tablespoons of the avocado mixture to the corner of an egg roll wrapper.

Fold corner over the filling and roll the egg roll once.

Fold each side in and continue rolling the egg roll.

Dab the final corner with water so that it seals.

Repeat until all of the egg rolls are filled.

Preheat the Air Fryer to 350 degrees for 5 minutes before adding the egg rolls. Spray each egg roll with olive oil.

Cook at 350 degrees for 8-10 minutes turning half way.

While the egg rolls are cooking, prepare the sauces by combining all of the ingredients.

Serve and enjoy!

Air Fryer Avocado Egg Rolls

A healthy and delicious snack made in the Air Fryer.

Avocado Egg Rolls

  • 3 Avocados (peeled and diced)
  • 8-10 Grape Tomatoes (chopped)
  • 1/4 Cup Red Onion (diced)
  • 2 cloves Garlic (minced)
  • 1/4 Cup Cilantro (chopped)
  • 3 TBSP Lime juice
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Cumin
  • 1/2 tsp Chili Powder
  • 12 Egg roll wrappers

Cilantro Lime Sauce

  • 1/4 Cup Cilantro (chopped)
  • 1/2 Cup Honey
  • 1/4 Cup Olive Oil
  • 2 TBSP Lime Juice
  • 2 Cloves Garlic (minced)
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper

Sweet Chili Lime Sauce

  • 1/4 Cup Cold Water
  • 1/4 Cup Lime Juice
  • 1 tsp Siracha
  • 1 tsp Red Chili Flakes
  • 1 TBSP Cornstarch
  • 2 Cloves Garlic (Minced)
  • 1 tsp Salt
  • 1/2 Cup Sugar

To Prepare the Egg Rolls:

  1. Chop all of the ingredients and combine in a bowl. Mix well.

  2. Add about two tablespoons of the avocado mixture to the corner of an egg roll wrapper.

  3. Fold corner over the filling and roll the egg roll once.

  4. Fold each side in and continue rolling the egg roll.

  5. Dab the final corner with water so that it seals.

  6. Repeat until all of the egg rolls are filled.

  7. Preheat the Air Fryer to 350 degrees for 5 minutes before adding the egg rolls. Spray each egg roll with olive oil.

  8. Cook at 350 degrees for 8-10 minutes turning half way.

To prepare the sauces:

  1. Mix all of the ingredients together then serve with the egg rolls.

Air Fryer Southwestern Egg Rolls

Another day, another Air Fryer recipe to try!

This one is especially delicious! These Southwestern Egg Rolls will please just about any crowd and are perfect for a party or get together…. or for a Saturday afternoon when you lack self control and eat almost all of them. Ok, I did have some help from the boys. 🙂 This recipe makes 20 egg rolls with some filling left over to snack on during the process, ha!

I will drop an oven recipe below if you don’t have an Air Fryer!

Start out by dicing an onion, mincing 4 cloves of garlic and chopping 1/3 cup of cilantro. Then heat up a large pan, add one tablespoon of oil and the onions. Saute until translucent.

Add garlic and spinach and cook until spinach is wilted, 1-2 minutes. 

Add the remaining ingredients aside from the egg roll wrappers and stir to combine. 

To assemble the egg rolls: add filling to one corner of the wrapper. Fold the corner over the filling and roll once. 

Fold each side in towards the middle. 

Continue to roll the egg roll up. 

Wet the remaining corner of the egg roll wrapper with a small amount of water to help seal the egg roll. 

Continue until you have filled all of the egg rolls. There may be some filling left. 

Preheat the Air Fryer to 375 degrees for 3 minutes before adding the egg rolls. 

Working in batches, spray the egg rolls with a little bit of oil and then cook them for 8-9 minutes flipping after 4 minutes.

**If you don’t have an Air Fryer, bake the egg rolls in a preheated oven at 425 degrees for 10-15 minutes. **

Serve with guacamole, sour cream, or salsa and enjoy! 🙂

Air Fryer Southwestern Egg Rolls

Delicious southwester egg rolls made in the Air Fryer. Perfect appetizer for any event!

  • 1 Package Egg Roll Wrappers (20 count)
  • 1 Yellow Onion (Diced)
  • 4 cloves Garlic (Minced)
  • 1 can Corn (drained)
  • 1 can Black Beans (drained)
  • 1 can Green Chiles (4 oz, drained)
  • 2 cups Spinach
  • 1 cup Cheese (Mexican blend)
  • 1/3 cup Cilantro (chopped)
  • 1 tsp Cumin
  • 1/2 tsp Chili Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 TBSP Olive Oil
  1. In a large pan, heat up 1 TBSP of olive oil. Add the onions and saute until translucent. 

  2. Add garlic and spinach and cook until spinach is wilted, 1-2 minutes. 

     

  3. Add the remaining ingredients aside from the egg roll wrappers and stir to combine.

Air Fryer French Fries

It’s me, I’m back again for another Air Fryer recipe!

I seriously can’t get enough of this thing…. and what’s this? Crispy french fries without deep frying in a ridiculous amount of oil?? Oh yes, it’s a real thing and they are so simple to make in the Air fryer!

I love my Ninja Air Fryer but there are several to choose from making it easy to find one you love!

Grab a few potatoes, because I’m about to show you how to make the best french fries you’ve ever had!

Wash and slice the potatoes, then add them to a bowl with ice water and let them soak for 30 minutes. 

Drain the potatoes and toss with olive oil, salt and pepper. Feel free to spice them up any way you want! Preheat the Air fryer to 375 degrees for at least 3 minutes. Add the potatoes to the air fryer and cook for 20-25 minutes. Be sure to shake the basket and/or mix the fries every 5 minutes to make sure they cook evenly. 

Add additional time as needed to crisp them up to your liking! Serve these with your favorite dish such as some Air Fryer Chicken Tenders, or by themselves because they are just THAT GOOD!

Air Fryer French Fries

You will never make french fries another way after trying these!

  • 4 Potatoes (large)
  • 2 TBSP Olive oil
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  1. Wash and slice the potatoes, then add them to a bowl with ice water and let them soak for 30 minutes. 

  2. Drain the potatoes and toss with olive oil, salt and pepper. Feel free to spice them up any way you want! 

  3. Preheat the Air fryer to 375 degrees for at least 3 minutes. Add the potatoes to the air fryer and cook for 20 minutes. Be sure to shake the basket and/or mix the fries every 5 minutes to make sure they cook evenly. 

  4. Add additional time as needed to crisp them up to your liking!

Start by gathering your ingredients, slice the chicken breasts into strips of your desired size. They do not have to be perfect, they’ll still taste delicious! Season the chicken with salt and pepper.

Mix the bread crumbs and seasonings together in one bowl, whisk the eggs in another bowl and add the flour to a third bowl.

Coat each piece of chicken in flour, then dip in the egg mixture and finally into the bread crumbs.

Preheat the air fryer to 350 degrees for at least 3 minutes, then carefully add the pieces of chicken. Don’t overcrowd the basket, this will prevent the chicken strips from cooking evenly.

Cook the chicken strips at 350 degrees for 12 minutes, turning over after the first 6 minutes.

Work in batches until all of the chicken tenders are cooked.

Serve with your favorite dipping sauce and sides. We love having these with Air Fryer French Fries! You’ve got to try them! 🙂

Air Fryer Chicken Tenders

The most delicious chicken tenders you will ever make, thanks to the Air Fryer! 

  • 4 Chicken Breasts
  • 3 Eggs
  • 1.5 Cups Breadcrumbs
  • 1 Cup Flour
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Paprika
  • 1/2 tsp Oregano

Pressure Cooker Cookies and Cream Cheesecake


Omg! As if I needed another reason to love my Instant Pot… seriously, this is the best cheesecake ever! Haha! 

If you’re new to the Instant Pot start here: 

Instant Pot 101
Grab your ingredients and let’s get started! 


Start out by crushing 10-12 Oreo cookies to make the crust for your cheesecake. Mix with 1/2 tsp sugar and 2 TBSP of butter. 


Spray your 7-Inch Springform Pan with non-stick cooking spray. Then pour the crust mixture in and spread evenly in the bottom of the pan. Place the springform pan in the freezer while you prepare the filling. 


For the filling: Mix the cream cheese and sugar until smooth. 


Add the eggs one at a time and mix until fully incorporated. 


Add the heavy cream, flour and vanilla and mix well.



Fold in the white chocolate chips and more crushed Oreos. 

Pour the mixture into the Springform Pan


Cover the pan with a paper towel and then a piece of aluminum foil.


Place the springform pan on a trivet and carefully lower it into the pressure cooker.


Close the lid, secure the venting knob and cook on HIGH pressure for 40 minutes. Allow a 15 minute natural pressure release before quickly releasing any pressure that is left. 


Allow the cheesecake to cool for at least 6 hours before adding the toppings. 

For the toppings: Place the white chocolate chips in a bowl and pour the heavy cream over them. Put the bowl in the Microwave and cook for 1 minute, stirring every 30 seconds until melted completely. 


Drizzle overtop of the cheesecake and add more Oreo crumbs.

Pressure Cooker Cookies and Cream Cheesecake

  • Servings: 6-8

A delicious Cheesecake recipe for the Instant Pot or Pressure Cooker.

Ingredients

For the crust:

-10-12 Oreo cookies crushed

-2 TBSP butter melted

-1/2 tsp sugar For the filling:

-16 oz cream cheese (room temperature)

-1/2 cup sugar

-2 tsp flour

-2 eggs

-1/4 cup heavy cream

-1 TBSP vanilla

-1/4 cup white chocolate chips

-2-3 Oreo cookies crushed For the topping:

-3/4 cup white chocolate chips

-1/4 cup heavy cream

-4-6 Oreos crumbled

Directions

1.Spray your 7-inch springform pan with non-stick cooking spray. 

2.For the crust: mix the crushed Oreo cookies, melted butter and sugar then pour into the springform pan and press it down on the bottom of the pan. Place the springform pan into the freezer for 10 minutes.

3.For the filling: Beat the cream cheese and sugar until smooth, add the eggs and mix until fully incorporated. Add the flour, vanilla and cream and mix. Fold in the white chocolate chips and crushed Oreo cookies. Carefully pour the mixture into the springform pan. 

4.Cover the springform pan with a paper towel and then a piece of aluminum foil. Pour 1 Cup of water into the pressure cooker inner pot, then place the springform pan on a trivet and carefully lower the trivet into the pressure cooker. 

5.Cook on HIGH pressure for 40 minutes and then allow the pressure to release naturally for 15 minutes before quickly releasing the rest of the pressure. Allow the cheesecake to cool in the fridge for at least 6 hours. 

6.For the topping: melt the white chocolate chips and heavy cream in the microwave for 1 minute. Check every 30 seconds and Stir until smooth. 

7.When the cheesecake is cool, drizzle the white chocolate ganache over the cheesecake and top with crushed Oreos.

Easy Homemade Tortillas

Have you ever wanted to make your own tortillas? To me, they just taste better when they’re made from scratch! These are SO good!! They’re super easy to prepare and only require a few ingredients. 

Here’s what you’ll need: 

Start out by mixing the flour, salt and baking powder together in a bowl. 


Add the vegetable oil and then the warm water and mix well until the dough forms. 


Knead the dough for 2-3 minutes. 


Roll the dough into small round balls. 

Flatten and roll out each ball into small/medium circles. 


Cook on a pan or griddle over low-medium heat for 1-2 minutes per side until done.


Yum! Serve with your favorite Mexican dishes. 


Try it with some Homemade Colorado Green Chili and Homemade Refried Beans

A simple homemade tortilla recipe.

Ingredients

-3 Cups All Purpose Flour

-1 tsp Baking Powder

-1 tsp Salt

-1/3 Cup Vegetable oil

-1 Cup warm water

Directions

  1. In a medium bowl, mix the flour, baking powder and salt. Add the water and oil and mix thoroughly. 
  2. Knead dough for 2-3 minutes. 
  3. Roll dough into small round balls.
  4. Flatten and roll out each ball into a small-medium circle with a rolling pin.

Instant Pot Beef Stroganoff

Okay, I have to admit… about seven years ago, I could only cook Hamburger Helper. LOL! It’s a place to start, right? Well, NOW I can cook almost anything… and I decided to convert this family favorite to an Instant Pot recipe, minus the boxed ingredients. 😉 It turned out AMAZING. So amazing, in fact that my 7 and 5 year olds asked me to send it in their lunches for school today! It’s super simple to make and only calls for a few ingredients.

Here’s what you’ll need for this tasty dish:

Start out by turning the Instant Pot to sauté mode and allow it to heat up then add the olive oil. Add the onion and garlic and then add the ground beef and sauté until brown. Drain the grease.

Add the flour, salt and pepper and stir. Mix the onion soup mix with the beef broth and pour into the Instant Pot. Add the sour cream, cream of mushroom soup and the uncooked egg noodles and stir.

Close the lid, turn the venting knob to “Sealing” and cook on HIGH pressure for 7 minutes before quickly releasing the pressure.

-4 cups beef broth

-1 Cup sour cream or yogurt

-3/4 bag (16 oz/ 1 pound bag) egg noodles uncooked

-1 package dry onion soup mix

-2 Tbsp flour

-1/2 tsp salt

-1/2 tsp black pepper

-2 Tbsp olive oil

Directions

  1. Turn the Instant Pot to sauté mode and allow it to heat up then add the olive oil. Add the onion and garlic and then add the ground beef and sauté until brown. Drain the grease.
  2. Add the flour, salt and pepper and stir. Mix the onion soup with the beef broth and pour into the Instant Pot. Add the sour cream, cream of mushroom soup and the uncooked noodles and stir.
  3. Close the lid, turn the venting knob to sealing and Cook on HIGH pressure for 7 minutes before quickly releasing the rest of the pressure.

Instant Pot Jambalaya

Just when I think I couldn’t love my Instant Pot anymore, I pull together a recipe like this Jambalaya and fall in love all over again! This is a simple, cajun recipe adjusted for the Instant Pot or Pressure cooker.

Which Instant Pot is best?

This recipe calls for Creole Seasoning, and if you have trouble finding it in the grocery store like I did, you can easily make your own. You probably have all of the ingredients on hand! Click here for a simple recipe: How to make Creole Seasoning. Easy!

Once you’ve made your Creole Seasoning, grab the rest of your ingredients and get ready for a flavorful dish! 🙂

Feel free to add shrimp or crawfish to this dish, I decided to stick with smoked sausage (instead of Andouille sausage) and chicken. The smoked sausage isn’t as spicy, and I have little mouths to feed! 🙂

Start out by chopping the onion, garlic, bell peppers, celery and tomatoes and set aside.

Slice the chicken and sausage. Turn the Instant Pot to Sauté mode and allow it to heat up before adding the olive oil. Add the sausage and chicken and cook for 2-3 minutes.

Add the onion, garlic, bell peppers, tomatoes and celery and cook for another 3-4 minutes.

Add the seasonings, soy sauce, Worcestershire sauce, chicken broth and rice and stir. (If you’re adding shrimp or crawfish, remove the tails and add them now.)

Close the lid, turn the knob to sealing and cook on HIGH pressure for 10 minutes before quickly releasing the rest of the pressure.

Ingredients

-1 12oz package of Andouille or Smoked sausage sliced

-1-2 Chicken breasts diced

-1 Onion diced

-4 cloves Garlic minced

-1 red bell pepper diced

-1 green bell pepper diced

-2 cups diced tomato or 1 can diced tomatoes

-3 celery stalks sliced

-2 cups white rice

-3 cups chicken broth

-2 TBSP olive oil

-1 TBSP soy sauce

-1 TBSP Worcestershire sauce

-1 tsp Creole seasoning

-1/2 tsp Cajun seasoning

-1/2 tsp Salt

**OPTIONAL- 1-2 Cups of shrimp or craw fish

Directions

1.Chop the bell peppers, onion, garlic, celery and tomatoes and set aside.

2.Slice the sausage and chicken.

3.Turn the Instant Pot to Sauté mode and allow it to heat up before adding the olive oil. Add the sausage and chicken and cook for 2-3 minutes.

4.Add the onion, garlic, bell peppers, tomatoes and celery and cook for another 3-4 minutes.

5.Add the seasonings, soy sauce, Worcestershire sauce, chicken broth and rice and stir. (If you’re adding shrimp or craw fish, remove the tails and add them now.)

6.Close the lid, turn the knob to sealing and cook on HIGH pressure for 10 minutes before quickly releasing the rest of the pressure.

7.Stir and enjoy!

Easy Hard Boiled Eggs- Instant Pot

One of the first things that I recommend new Instant Pot owners make is Hard boiled eggs. They’re SO simple and they peel so easily!

Which Instant Pot is best?

There are a few different methods for making eggs in the Instant Pot, and you’ll discover what works best for you! I’ve found that what’s called the “5-5-5 method” works the best, but the “6-6-6- method” works as well.

What does that mean?? It means, you cook the eggs on HIGH pressure for 5 minutes, then when the timer  goes off, allow the pressure to release naturally for  5 minutes before releasing the rest of the pressure. THEN put the eggs into an ice bath for another  minutes. After that, you  can peel your eggs and you’ll see how easily the shells slide off.

If you notice your eggs aren’t cooked, you can try the 6-6-6 method exactly the same way, just adding an extra minute to each step.

Simple enough right?

Here we go.

Grab some eggs. As many as you want. I’ve done 18 at a time before. 🙂

For this recipe you can use the trivet that came with the Instant Pot, or you can use a steamer basket. Both will work perfectly!

Add 1 Cup of water to the Instant Pot. Then place the trivet in the bottom. Stack the eggs on top of the trivet. Close the Instant Pot and turn the venting knob to sealing. Cook the eggs on HIGH pressure for 5 minutes, then when the timer  goes off, allow the pressure to release naturally for  5 minutes before releasing the rest of the pressure.

Next, carefully lift the Instant Pot inner pot out and carry it to the sink using a towel or Instant Pot mitts. Fill with water and ice and leave the eggs to cool for at least 5 minutes.

Now you can peel your eggs, and watch how easily the shells slide off!

  • Servings: 6-12

Ingredients

-Eggs, you can cook as many as you want at a time.

-1 Cup water

Directions

  1. Add 1 Cup of water to the Instant Pot.
  2. Add Trivet to Instant Pot and Stack eggs on the trivet.
  3. Close the lid, turn the knob to sealing and cook on HIGH pressure for 5 minutes. When the timer goes off, allow the pressure to release for another 5 minutes before releasing the rest of the pressure.
  4. Put the eggs into an ice bath for at least 5 minutes. Peel and eat!

 

That’s it!

Instant Pot Chicken Picatta


This has been my favorite dish for SO long! I just HAD to adapt the recipe for the Instant Pot. Simple, delicious and kid-friendly! 🙂

Which Instant Pot is best?

You can serve this dish over pasta like I did, or over rice or mashed potatoes. It would also be delicious by itself! 🙂

Grab your ingredients, and let’s get started! 🙂

This jar of bouillon mix was on close out sale at our local Kroger so I decided to try it, it added so much flavor to the dish! I used it for the pasta as well and it was delicious!

Start out by Turning the Instant Pot to Sauté and allow it to heat up. Add 2 TBSP of oil or butter then add the garlic and sauté 2-3 minutes.

Season the chicken breasts with salt and pepper then add then add them to the Instant Pot and cook for 1-2 minutes on each side.

 

 

Add the chicken broth, lemon juice, lemon zest and capers to the Instant Pot.

Close the lid, turn the venting knob to sealing and Cook on HIGH pressure for 3 minutes. Quickly release the pressure when it’s finished cooking.

Remove the chicken and slice. Mix the cornstarch and water then add it to the pot. Add the heavy cream and parmesan cheese. Allow the sauce to thicken for 5 minutes.

Serve over Pasta, rice or mashed potatoes. YUM!!! 🙂

-1 lb thin sliced chicken breasts

-1/3 Cup lemon juice

-1 Tbsp lemon zest

-1/2 Cup chicken broth

-1/2 Cup heavy cream

-1/4 Cup capers

-3-4 cloves garlic minced

-1/4 Cup grated parmesan cheese

-1/2 tsp Sea salt

-1/2 tsp pepper

-2 TBSP olive oil or butter

-1 TBSP Corn starch mixed with 2 TBSP Cold water

-1 Cup sliced mushrooms (optional)

-shredded parmesan cheese for topping (optional)

Directions

  1. Turn the Instant Pot to Sauté and allow it to heat up. Add 2 TBSP of oil. Add the garlic and sauté 2-3 minutes.
  2. Season the chicken breasts with salt and pepper then add them to the Instant Pot and cook for 1-2 minutes on each side.
  3. Add the chicken broth, lemon juice, zest and capers.
  4. Close the lid, turn the venting knob to sealing and Cook on HIGH pressure for 3 minutes. Quickly release the pressure.
  5. Remove the chicken and slice, Turn the Instant pot back to Sauté, add the cornstarch/water, heavy cream, and parmesan cheese and stir. Allow the sauce to thicken for 5 minutes.
  6. Serve chicken and sauce over pasta or rice.
