Air Fryer Avocado Egg Rolls

I’m back with another delicious and healthy Air Fryer recipe. I whipped these Avocado Egg Rolls up yesterday and we enjoyed them by the pool with family. They were a huge hit!

If you’ve never used an air fryer before I highly recommend them! I love how it works! It is perfect for so many things, including these simple Air Fryer Chicken Tenders with Air Fryer French Fries. (You’ll never make french fries another way, I promise.) It is also a healthier alternative to frying with oil.

Not only does the air fryer cook food quickly and efficiently, it can bake, roast, grill or fry pretty much anything you can think of.

There are several different brands and sizes available which makes choosing the perfect one for you, that much easier. I have added the top 4 selling Air Fryers on Amazon right now, including the Ninja Air Fryer, which is the one I used for this recipe.

These Avocado Egg Rolls are so simple to make in the Air fryer and I’ve included recipes for two different dipping sauces. Start out by chopping all of the ingredients and combine them in a bowl.

Mix well, mashing the avocados just a little bit as you go.

Add about two tablespoons of the avocado mixture to the corner of an egg roll wrapper.

Fold corner over the filling and roll the egg roll once.

Fold each side in and continue rolling the egg roll.

Dab the final corner with water so that it seals.

Repeat until all of the egg rolls are filled.

Preheat the Air Fryer to 350 degrees for 5 minutes before adding the egg rolls. Spray each egg roll with olive oil.

Cook at 350 degrees for 8-10 minutes turning half way.

While the egg rolls are cooking, prepare the sauces by combining all of the ingredients.

Serve and enjoy!

Ingredients

Avocado Egg Rolls

  • 3 Avocados peeled and diced
  • 8-10 Grape Tomatoes chopped
  • 1/4 Cup Red Onion diced
  • 2 cloves Garlic minced
  • 1/4 Cup Cilantro chopped
  • 3 TBSP Lime juice
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Cumin
  • 1/2 tsp Chili Powder
  • 12 Egg roll wrappers

Cilantro Lime Sauce

  • 1/4 Cup Cilantro chopped
  • 1/2 Cup Honey
  • 1/4 Cup Olive Oil
  • 2 TBSP Lime Juice
  • 2 Cloves Garlic minced
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper

Sweet Chili Lime Sauce

  • 1/4 Cup Cold Water
  • 1/4 Cup Lime Juice
  • 1 tsp Siracha
  • 1 tsp Red Chili Flakes
  • 1 TBSP Cornstarch
  • 2 Cloves Garlic Minced
  • 1 tsp Salt
  • 1/2 Cup Sugar

Instructions

To Prepare the Egg Rolls:

  1. Chop all of the ingredients and combine in a bowl. Mix well.

  2. Add about two tablespoons of the avocado mixture to the corner of an egg roll wrapper.

  3. Fold corner over the filling and roll the egg roll once.

  4. Fold each side in and continue rolling the egg roll.

  5. Dab the final corner with water so that it seals.

  6. Repeat until all of the egg rolls are filled.

  7. Preheat the Air Fryer to 350 degrees for 5 minutes before adding the egg rolls. Spray each egg roll with olive oil.

  8. Cook at 350 degrees for 8-10 minutes turning half way.

To prepare the sauces:

  1. Mix all of the ingredients together then serve with the egg rolls.

Air Fryer Southwestern Egg Rolls

Another day, another Air Fryer recipe to try!

This one is especially delicious! These Southwestern Egg Rolls will please just about any crowd and are perfect for a party or get together…. or for a Saturday afternoon when you lack self control and eat almost all of them. Ok, I did have some help from the boys. 🙂 This recipe makes 20 egg rolls with some filling left over to snack on during the process, ha!

I will drop an oven recipe below if you don’t have an Air Fryer!

Start out by dicing an onion, mincing 4 cloves of garlic and chopping 1/3 cup of cilantro. Then heat up a large pan, add one tablespoon of oil and the onions. Saute until translucent.

Add garlic and spinach and cook until spinach is wilted, 1-2 minutes. 

Add the remaining ingredients aside from the egg roll wrappers and stir to combine. 

To assemble the egg rolls: add filling to one corner of the wrapper. Fold the corner over the filling and roll once. 

Fold each side in towards the middle. 

Continue to roll the egg roll up. 

Wet the remaining corner of the egg roll wrapper with a small amount of water to help seal the egg roll. 

Continue until you have filled all of the egg rolls. There may be some filling left. 

Preheat the Air Fryer to 375 degrees for 3 minutes before adding the egg rolls. 

Working in batches, spray the egg rolls with a little bit of oil and then cook them for 8-9 minutes flipping after 4 minutes.

**If you don’t have an Air Fryer, bake the egg rolls in a preheated oven at 425 degrees for 10-15 minutes. **

Serve with guacamole, sour cream, or salsa and enjoy! 🙂

Air Fryer Southwestern Egg Rolls

Delicious southwester egg rolls made in the Air Fryer. Perfect appetizer for any event!

Ingredients

  • 1 Package Egg Roll Wrappers 20 count
  • 1 Yellow Onion Diced
  • 4 cloves Garlic Minced
  • 1 can Corn drained
  • 1 can Black Beans drained
  • 1 can Green Chiles 4 oz, drained
  • 2 cups Spinach
  • 1 cup Cheese Mexican blend
  • 1/3 cup Cilantro chopped
  • 1 tsp Cumin
  • 1/2 tsp Chili Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 TBSP Olive Oil

Instructions

  1. In a large pan, heat up 1 TBSP of olive oil. Add the onions and saute until translucent. 

  2. Add garlic and spinach and cook until spinach is wilted, 1-2 minutes. 

     

  3. Add the remaining ingredients aside from the egg roll wrappers and stir to combine. 

  4. To assemble the egg rolls: add filling to one corner of the wrapper. 

  5. Fold the corner over the filling and roll once. 

  6. Fold each side in towards the middle. 

  7. Continue to roll the egg roll up. 

  8. Wet the remaining corner of the egg roll wrapper with a small amount of water to help seal the egg roll. 

  9. Continue until you have filled all of the egg rolls. There may be some filling left. 

  10. Preheat the Air Fryer to 375 degrees for 3 minutes before adding the egg rolls. 

  11. Working in batches, spray the egg rolls with a little bit of oil and then cook them for 8-9 minutes flipping after 4 minutes. 

  12. Serve with guacamole, salsa or sour cream. 

Recipe Notes

If you don’t have an Air Fryer, bake the egg rolls in a preheated oven at 425 degrees for 10-15 minutes. 

Air Fryer French Fries

It’s me, I’m back again for another Air Fryer recipe!

I seriously can’t get enough of this thing…. and what’s this? Crispy french fries without deep frying in a ridiculous amount of oil?? Oh yes, it’s a real thing and they are so simple to make in the Air fryer!

I love my Ninja Air Fryer but there are several to choose from making it easy to find one you love!

Grab a few potatoes, because I’m about to show you how to make the best french fries you’ve ever had!

Wash and slice the potatoes, then add them to a bowl with ice water and let them soak for 30 minutes. 

Drain the potatoes and toss with olive oil, salt and pepper. Feel free to spice them up any way you want! Preheat the Air fryer to 375 degrees for at least 3 minutes. Add the potatoes to the air fryer and cook for 20-25 minutes. Be sure to shake the basket and/or mix the fries every 5 minutes to make sure they cook evenly. 

Add additional time as needed to crisp them up to your liking! Serve these with your favorite dish such as some Air Fryer Chicken Tenders, or by themselves because they are just THAT GOOD!

Air Fryer French Fries

You will never make french fries another way after trying these!

Ingredients

  • 4 Potatoes large
  • 2 TBSP Olive oil
  • 1/2 tsp Salt

Instructions

  1. Wash and slice the potatoes, then add them to a bowl with ice water and let them soak for 30 minutes.

I recently did and I’m OBSESSED!!! I’ve been telling everyone that my Air Fryer is the perfect partner for my Instant Pot! Haha!

After using the Air Fryer to make these chicken tenders, I’m not sure I’ll ever make them another way again! They are super simple to make!

Start by gathering your ingredients, slice the chicken breasts into strips of your desired size. They do not have to be perfect, they’ll still taste delicious! Season the chicken with salt and pepper.

Mix the bread crumbs and seasonings together in one bowl, whisk the eggs in another bowl and add the flour to a third bowl.

Coat each piece of chicken in flour, then dip in the egg mixture and finally into the bread crumbs.

Preheat the air fryer to 350 degrees for at least 3 minutes, then carefully add the pieces of chicken. Don’t overcrowd the basket, this will prevent the chicken strips from cooking evenly.

Cook the chicken strips at 350 degrees for 12 minutes, turning over after the first 6 minutes.

Work in batches until all of the chicken tenders are cooked.

Serve with your favorite dipping sauce and sides. We love having these with Air Fryer French Fries! You’ve got to try them! 🙂

The most delicious chicken tenders you will ever make, thanks to the Air Fryer!

Ingredients

  • 4 Chicken Breasts

Sweet Potato and Chickpea Curry

I am so excited to share this amazing new recipe with you all! It’s always fun to try new flavors and this recipe is FULL of them. This Sweet potato and chickpea curry is vegan, kid friendly and easy on the wallet. 

Gather the ingredients and let’s get started!

Easy Instant Pot Egg Muffins

OMG!!

Egg “muffins” are a staple in our house, my sons absolutely love them! And I’m so glad that I found a way to make them in the Instant Pot.

If you’re new to the Instant Pot, start here:

Instant Pot 101

Grab the Ingredients and let’s get started!

For this recipe you can use either 1/2 cup of Greek yogurt or 1/2 cup of cottage cheese. Either will work!

Feel free to add what you like, 1/2  cup of vegetables of your choice and 1/4 cup of bacon or sausage if you’d like. We love to switch it up and add new things to our egg muffins so have fun with it!!

Start by adding all of the ingredients to a bowl or blender. Mix well.

For the next step, you’ll need some silicone Muffins tins. These are the ones I use!

Spray the muffin tins with non stick cooking spray.

Fill the liners about 3/4 of the way full. I was able to make 10 Muffins with this recipe.

Place 1 cup of water in the bottom of the Instant Pot, then place the muffin tins on a trivet and lower the trivet into the Instant Pot. This is where having two Instant Pots comes in handy!! 🙂

Place the lid on the Instant Pot and press the “Steam” button. Adjust the time to 8 minutes.

When the timer is up, allow the pressure to release naturally, this will take about 15 minutes.

Use a butter knife to loosen the Muffins if needed, and enjoy!

Pumpkin Chocolate Chip Cookies

One of my favorite parts of this time of year is baking delicious treats for my family…. and these cookies are ALWAYS requested by my sons.

These are super easy, soft and delicious pumpkin cookies with chocolate chips in them….. what more could you ask for? Check out this little sneak peek before we get started! 😉

Grab everything you need, and prepare to make the best pumpkin cookies you’ve ever tasted!

For the pumpkin pie spice, you can use:

-5 tsp Ground Cinnamon

-2 1/2 tsp Ground Ginger

-1 1/2 tsp Ground Cloves

-1 tsp Ground Nutmeg

Preheat the oven to 375 degrees. 

Start out by sifting the 5 cups of flour into a large bowl.

Add the sugar, cans of pumpkin, two eggs, melted butter and vanilla to a large mixing bowl. Mix the pumpkin pie spice with the salt, baking soda and baking powder and add that to the bowl. Mix well.

Mix well.

Add the flour 1-2 cups at a time, stir well.

Add the bag of chocolate chips and mix evenly into the batter.

Line a baking sheet with parchment paper.

Use an ice cream scoop to scoop batter into small balls and drop onto parchment paper about 2 inches apart.

Bake at 375 degrees for 13-15 minutes.

Allow the cookies to cool before serving.

Yum!

Soft and delicious cookies in no time at all! Perfect to add to your Thanksgiving meal.

Instant Pot Creamy Tomato Tortellini Soup

Fall is here! Which means so is soup weather! haha! This is a simple and delicious recipe that you can throw together in no time thanks to the Instant Pot!

Which Instant Pot is best?

Instant Pot 101

Grab the ingredients you’ll need and let’s whip up this delicious soup! 🙂

For the seasonings:

-1 tsp Italian Seasoning

-1/2 tsp Salt

-1/2 tsp Black Pepper

Start out by chopping the onion and garlic.

Turn the Instant Pot to Saute mode and allow it to heat up before adding the olive oil. Add the onion and garlic and cook until the onions are translucent, about 3-4 minutes.

Add the chicken broth, seasonings, diced tomatoes, tomato sauce and the frozen tortellini and stir.

Close the lid, turn the venting knob to “sealing” and cook on HIGH pressure for 5 minutes before quickly releasing the pressure.

When it is finished cooking and the pressure has released, carefully remove the lid, add the heavy cream or milk and spinach and stir until the spinach has wilted.

Top with Parmesan cheese and serve! yum!

Pressure Cooker Cookies and Cream Cheesecake


Omg! As if I needed another reason to love my Instant Pot… seriously, this is the best cheesecake ever! Haha! 

If you’re new to the Instant Pot start here:

Grab your ingredients and let’s get started! 


Start out by crushing 10-12 Oreo cookies to make the crust for your cheesecake. Mix with 1/2 tsp sugar and 2 TBSP of butter. 


Spray your 7-Inch Springform Pan with non-stick cooking spray. Then pour the crust mixture in and spread evenly in the bottom of the pan. Place the springform pan in the freezer while you prepare the filling. 


For the filling: Mix the cream cheese and sugar until smooth. 


Add the eggs one at a time and mix until fully incorporated. 


Add the heavy cream, flour and vanilla and mix well.



Fold in the white chocolate chips and more crushed Oreos. 

Pour the mixture into the Springform Pan


Cover the pan with a paper towel and then a piece of aluminum foil.


Place the springform pan on a trivet and carefully lower it into the pressure cooker.


Close the lid, secure the venting knob and cook on HIGH pressure for 40 minutes. Allow a 15 minute natural pressure release before quickly releasing any pressure that is left. 


Allow the cheesecake to cool for at least 6 hours before adding the toppings. 

For the toppings: Place the white chocolate chips in a bowl and pour the heavy cream over them. Put the bowl in the Microwave and cook for 1 minute, stirring every 30 seconds until melted completely. 


Drizzle overtop of the cheesecake and add more Oreo crumbs.

For the crust:

-10-12 Oreo cookies crushed

-16 oz cream cheese (room temperature)

-1/2 cup sugar

-2 tsp flour

-2 eggs

-1/4 cup heavy cream

-1 TBSP vanilla

-1/4 cup white chocolate chips

-2-3 Oreo cookies crushed For the topping:

-3/4 cup white chocolate chips

-1/4 cup heavy cream

-4-6 Oreos crumbled

Directions

1.Spray your 7-inch springform pan with non-stick cooking spray. 

2.For the crust: mix the crushed Oreo cookies, melted butter and sugar then pour into the springform pan and press it down on the bottom of the pan. Place the springform pan into the freezer for 10 minutes.

3.For the filling: Beat the cream cheese and sugar until smooth, add the eggs and mix until fully incorporated. Add the flour, vanilla and cream and mix. Fold in the white chocolate chips and crushed Oreo cookies. Carefully pour the mixture into the springform pan. 

4.Cover the springform pan with a paper towel and then a piece of aluminum foil. Pour 1 Cup of water into the pressure cooker inner pot, then place the springform pan on a trivet and carefully lower the trivet into the pressure cooker. 

5.Cook on HIGH pressure for 40 minutes and then allow the pressure to release naturally for 15 minutes before quickly releasing the rest of the pressure. Allow the cheesecake to cool in the fridge for at least 6 hours. 

6.For the topping: melt the white chocolate chips and heavy cream in the microwave for 1 minute. Check every 30 seconds and Stir until smooth. 

7.When the cheesecake is cool, drizzle the white chocolate ganache over the cheesecake and top with crushed Oreos.

Easy Homemade Tortillas

Have you ever wanted to make your own tortillas? To me, they just taste better when they’re made from scratch! These are SO good!! They’re super easy to prepare and only require a few ingredients. 

Here’s what you’ll need: 

Start out by mixing the flour, salt and baking powder together in a bowl. 


Add the vegetable oil and then the warm water and mix well until the dough forms. 


Knead the dough for 2-3 minutes. 


Roll the dough into small round balls. 

Flatten and roll out each ball into small/medium circles. 


Cook on a pan or griddle over low-medium heat for 1-2 minutes per side until done.


Yum! Serve with your favorite Mexican dishes.

A simple homemade tortilla recipe.

-3 Cups All Purpose Flour

-1 tsp Baking Powder

-1 tsp Salt

-1/3 Cup Vegetable oil

-1 Cup warm water

Directions

  1. In a medium bowl, mix the flour, baking powder and salt. Add the water and oil and mix thoroughly. 
  2. Knead dough for 2-3 minutes. 
  3. Roll dough into small round balls.
  4. Flatten and roll out each ball into a small-medium circle with a rolling pin. 
  5. Cook over low-medium heat for 1-2 minutes per side until done.
