Once you’ve made your Creole Seasoning, grab the rest of your ingredients and get ready for a flavorful dish! 🙂

Feel free to add shrimp or crawfish to this dish, I decided to stick with smoked sausage (instead of Andouille sausage) and chicken. The smoked sausage isn’t as spicy, and I have little mouths to feed! 🙂

Start out by chopping the onion, garlic, bell peppers, celery and tomatoes and set aside.

IMG_5744

Slice the chicken and sausage. Turn the Instant Pot to Sauté mode and allow it to heat up before adding the olive oil. Add the sausage and chicken and cook for 2-3 minutes.

Add the onion, garlic, bell peppers, tomatoes and celery and cook for another 3-4 minutes.

IMG_5749

Add the seasonings, soy sauce, Worcestershire sauce, chicken broth and rice and stir. (If you’re adding shrimp or crawfish, remove the tails and add them now.)

Easy Hard Boiled Eggs- Instant Pot

IMG_5669FullSizeRender (18)

One of the first things that I recommend new Instant Pot owners make is Hard boiled eggs. They’re SO simple and they peel so easily!

If you’re new to the Instant Pot, Start here:

Instant Pot 101: Tips, Tricks and Must-Have Accessories.

Which Instant Pot is best?

There are a few different methods for making eggs in the Instant Pot, and you’ll discover what works best for you! I’ve found that what’s called the “5-5-5 method” works the best, but the “6-6-6- method” works as well.

What does that mean?? It means, you cook the eggs on HIGH pressure for 5 minutes, then when the timer  goes off, allow the pressure to release naturally for  5 minutes before releasing the rest of the pressure. THEN put the eggs into an ice bath for another  minutes. After that, you  can peel your eggs and you’ll see how easily the shells slide off.

If you notice your eggs aren’t cooked, you can try the 6-6-6 method exactly the same way, just adding an extra minute to each step.

Simple enough right?

Here we go.

Grab some eggs. As many as you want. I’ve done 18 at a time before. 🙂

For this recipe you can use the trivet that came with the Instant Pot, or you can use a steamer basket. Both will work perfectly!

Add 1 Cup of water to the Instant Pot. Then place the trivet in the bottom. Stack the eggs on top of the trivet. Close the Instant Pot and turn the venting knob to sealing. Cook the eggs on HIGH pressure for 5 minutes, then when the timer  goes off, allow the pressure to release naturally for  5 minutes before releasing the rest of the pressure.

IMG_4536IMG_4548

IMG_5642

Next, carefully lift the Instant Pot inner pot out and carry it to the sink using a towel or Instant Pot mitts. Fill with water and ice and leave the eggs to cool for at least 5 minutes.

IMG_5643

Now you can peel your eggs, and watch how easily the shells slide off!

IMG_5645IMG_5644

Look at that! 🙂

Beautiful!

Instant Pot Meatloaf and Garlic Mashed Potatoes

FullSizeRender (14)

Anytime that I can get Hayden (my 7 year old) to eat red meat (beef, pork etc) is a win for me! Anytime I’ve made meatloaf before, he’s hated it and since he loves everything I make in the Instant Pot, I decided to give it a shot! Well, it was a HUGE success… the only problem? I didn’t make enough, apparently. haha!

If you’re new to the Instant Pot, start here:

Instant Pot 101: Tips, Tricks and Must-Have Accessories.

Which Instant Pot is best?

Okay okay, this is a relatively easy dinner to prepare, so I had my sons help me out! Grab your ingredients and let’s go!

IMG_5334

IMG_5337

Start by washing, peeling and dicing the potatoes. Place them in the Instant Pot. Add the chicken broth, butter, salt, pepper and onion/garlic.

IMG_5342

Mix the ingredients for the meatloaf together. Spray your pyrex dishes or 7-inch springform pan with non-stick cooking spray.

IMG_5338

Add the meatloaf to the dishes or pan.

IMG_5339

Mix the ingredients for the meatloaf sauce and then spoon the sauce over top.

IMG_5340IMG_5341

You can make this all in one pot by placing the trivet on top of the mashed potatoes and then placing your dishes or springform pan on top. You can also cook them separately if you have two Instant Pots.

IMG_5343

If you are making the meatloaf and potatoes separately: add 1 cup of water to the bottom of the pot and place your dishes or springform pan on the trivet inside the pot. Cook for the same amount of time.

IMG_5344

If you’re making the meatloaf and potatoes in the same pot: Close the lid, adjust the venting knob to “Sealing” and cook on HIGH pressure for 20 minutes. Quickly release the pressure and remove the meatloaf.

Mash the potatoes and add more butter, heavy cream and cheddar cheese if you’d like.

Instant Pot Orange Dreamsicle Pie

IMG_5025

We live in Colorado and we get weekly produce shipments from a local produce company. This week we got a huge bag of oranges, and after making the Instant Pot Key Lime Pie earlier this week, I got the idea to try it with oranges and make a “Dreamsicle” pie. I recruited my two cutest kitchen helpers and they loved making their own pie! So simple, a child could do it…. (Literally) 🙂

For this recipe you’ll need a Springform Pan  and an Instant Pot with a trivet.

IMG_5010

Prepare your 7 inch Springform pan by spraying it with non-stick spray. Crush Graham crackers and melt the butter. Mix graham crackers, melted butter, sugar and cinnamon.

IMG_5011IMG_4795

Pour into Springform pan and press down to flaten the crust into the bottom of the pan. Place pan in the freezer for 5-10 minutes.

IMG_4796

To prepare the filling: beat the egg yolks then slowly add the can of condensed milk, yogurt, orange juice, vanilla and orange zest and sugar. Mix well.

FullSizeRender (51)FullSizeRender (52)

Pour the mixture into your prepared 7-inch Springform pan and cover with aluminum foil. Place pan onto a trivet.

Add 1 Cup of water to your Instant Pot then lower your trivet into the pot. Secure the lid and venting knob. Cook on HIGH pressure for 20 minutes and then allow a natural pressure release for 10 minutes.

Quickly remove the pressure and carefully remove your pie. Allow it to cool for at least 2 hours in the fridge before serving.

Begin by seasoning the chicken with salt, pepper and italian seasoning. Put 1 Cup of water in the Instant Pot. Place the trivet in the pot. Place chicken on trivet. Cook on HIGH pressure for 10 minutes. When it’s finished, quickly release the pressure. Remove the chicken and slice.

If you have a second pot, you can cook the pasta and the chicken at the same time, or you can cook the pasta on the stove. To learn how to prepare pasta in the Instant Pot, read here: How to Cook Pasta in the Instant Pot

When the pasta is finished, you can steam broccoli in a steamer basket in the Instant Pot if you’d like. Add 1 Cup of water and cook on HIGH pressure for 2 minutes. Quickly release the pressure when finished.
