Instant Pot Chicken Tortilla Soup

Fall is quickly approaching which means it’s time to whip out your favorite soup recipes! If you’re like me and love everything about fall, this recipe will win you over in no time.

This Chicken Tortilla Soup is one of our families favorite recipes and it is very easy to make in the Instant Pot.

Start out by turning the Instant Pot to Saute mode and allow it to heat up. Add the olive oil, then add the diced onion and bell peppers and cook for 3-4 minutes.

Add the rest of the ingredients except for the cilantro and stir.

Put the lid on and push the pressure cook button. Adjust the time to 12 minutes and allow it to cook. When the timer is up, allow the pressure to release naturally for 20 minutes before releasing the rest of the pressure.

Remove the chicken and shred.

Using an immersion blender, blend the soup for a quick 5-10 seconds just enough to give a creaminess to the soup.

Add the chicken back to the soup, add the cilantro and stir.

Serve the soup with your favorite toppings including sour cream, cheese, onion, avocado, tortilla chips, tomatoes, more cilantro, etc.

Ingredients

  • 1.5 lbs Chicken Breasts
  • 1 Onion Diced
  • 5 cloves Garlic Minced
  • 2 Bell Peppers Diced, any color
  • 4 cups Chicken Broth
  • 1 can Corn drained
  • 2 cans Diced Tomatoes
  • 1 can Diced Green Chiles
  • 1 can Black Beans drained and rinsed
  • 2 TBSP Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1.5 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1/2 tsp Smoked Paprika
  • 1 tsp Oregano
  • 1/2 Cup Cilantro Chopped

Instructions

Instant Pot Cilantro Lime Chicken with Black Beans and Rice

Grab the ingredients you’ll need and let’s go!

Start out by zesting and juicing the limes and set aside. Chop the onion and garlic. Then dice the chicken breast and season with seasonings.

Turn the Instant Pot to sauté mode. Add the olive oil or butter once the pot is hot.

Sauté the onion and garlic for 1-2 minutes before adding the chicken.

Cook the chicken until brown, then Add the rice, chicken broth and lime juice and zest.

Close the lid and turn the knob to sealing. Cook on HIGH pressure for 8-10 minutes. While that is cooking, Wash and Chop the cilantro and set aside. Then drain and rinse the beans and warm them on the stove or in the microwave.

When the 8-10 minutes is up, quickly release the pressure and then add the cilantro and black beans and stir. Add more lime juice and seasonings as needed.

Ingredients

-2 lbs chicken diced

-2 Tbsp olive oil or butter

-1/2 onion diced

-1/3 cup lime juice (2 limes)

-2 Tbsp lime zest

-2 cups white rice

-3 cups chicken broth

-1 15oz can black beans drained and rinsed

-1/2 cup cilantro chopped

-1/2 tsp salt

-1/2 tsp pepper

-1/2 tsp cumin

-1/2 tsp chili powder

 

 

 

Directions

  1. Zest and juice the limes and set aside. Chop the onion and garlic. Dice the chicken breast and season with seasonings.
  2. Turn the Instant Pot to sauté mode. Add the olive oil or butter once the pot is hot. .  Sauté the onion and garlic for 1-2 minutes before adding the chicken. Cook the chicken until brown, then Add the rice, chicken broth and lime juice and zest.
  3. Close the lid and turn the knob to sealing. Cook on HIGH pressure for 8-10 minutes. (I’m at high altitude so 10 is perfect for me, but 8 might work better for you :)) While that it cooking, Chop the cilantro and set aside. Then drain and rinse the beans and warm them on the stove or in the microwave.
  4. Quickly release the pressure then add the cilantro and black beans and stir. Add more lime juice and seasonings if needed.
  5. Enjoy! 😊 YUM!!!!
