Instant Pot Posole

Mmmmm… Posole 😉 One of my favorite things to eat! It’s SUPER easy to make in the Instant Pot and the kids even loved it! 

Paired with some Homemade Tortillas, what could be better?! 

If you’re new to the Instant Pot start here: 

Instant Pot 101
Here’s what you’ll need: 



For the seasonings:

  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 2 tsp oregano
  • 2 tsp chili powder
  • 1 bay leaf

Start out by turning the Instant Pot to sauté mode and allow it to heat up. Add 2 TBSP of olive oil before adding the diced onion and garlic. Sauté for 2-3 minutes. 


Add the diced pork, chicken broth, green chiles, Hominy and the seasonings. 

Close the lid, turn the venting knob to sealing and cook on HIGH pressure for 30 minutes. Quickly release the pressure when it’s finished. 

Turn the Instant Pot back to sauté mode. Mix 2 TBSP of corn starch with 2 TBSP of cold water and add it to the Posole. Allow it to thicken for about 10 minutes. 

Top with cilantro and lime wedges and serve! YUM!

A delicious Pressure Cooker recipe for this Mexican Soup.

Ingredients

-1-2 lb pork roast diced

-1 onion diced

-6 cloves garlic minced

-1 25 oz can Hominy

-1 4oz can diced green chiles

-5 cups chicken broth

-1 tsp salt

-1 tsp black pepper

-1 tsp cumin

-2 tsp oregano

-2 tsp chili powder

-1 bay leaf

-2 TBSP corn starch

-2 TBSP cold water

For Garnish (optional)

-1/4 cilantro chopped

-lime wedges

Directions

1.Dice the onion and mince the garlic. Turn the Instant Pot to sauté mode and allow it to heat up. Add 2 TBSP of olive oil then sauté the onion and garlic for 2-3 minutes. 

2.Add the chicken broth, pork, hominy, green chiles and seasonings and stir.

3.Close the lid turn the venting knob to sealing and cook on HIGH pressure for 30 minutes before quickly releasing the pressure. 

4.Turn the Instant Pot back to sauté mode. Mix the 2 TBSP of corn starch with 2 TBSP of cold water and add to the posole. Allow it to thicken for 10 minutes. Top with cilantro and lime wedges and serve! Yum!

Easy Homemade Tortillas

Have you ever wanted to make your own tortillas? To me, they just taste better when they’re made from scratch! These are SO good!! They’re super easy to prepare and only require a few ingredients. 

Here’s what you’ll need: 

Start out by mixing the flour, salt and baking powder together in a bowl. 


Add the vegetable oil and then the warm water and mix well until the dough forms. 


Knead the dough for 2-3 minutes. 


Roll the dough into small round balls. 

Flatten and roll out each ball into small/medium circles. 


Cook on a pan or griddle over low-medium heat for 1-2 minutes per side until done.


Yum! Serve with your favorite Mexican dishes. 


Try it with some Homemade Colorado Green Chili and Homemade Refried Beans

A simple homemade tortilla recipe.

Ingredients

-3 Cups All Purpose Flour

-1 tsp Baking Powder

-1 tsp Salt

-1/3 Cup Vegetable oil

-1 Cup warm water

Directions

  1. In a medium bowl, mix the flour, baking powder and salt. Add the water and oil and mix thoroughly. 
  2. Knead dough for 2-3 minutes. 
  3. Roll dough into small round balls.

Grandma Mary’s Tacoritos


This is a family favorite, my Great-Grandma Mary made this all the time for us, so when I found her recipe earlier this summer, I added it into our rotation and we love it! I hope you enjoy it too!

Start out by preheating the oven to 350 degrees. Brown the ground beef then drain the grease. I used my Instant Pot for this step. If you don’t know what an Instant Pot is, read this: Which Instant Pot is best?

Basically, it’s amazing! haha!

After you drain the grease, add the garlic, onion, pinch of salt/pepper and chili powder.

Make a sauce of the cream of chicken soup, water or chicken broth, sage, salt, pepper, cumin, oregano and green chiles. Let the sauce simmer for 30 minutes.

To make the tacoritos: add beef, sauce and cheese to a flour tortilla and roll up like a burrito. Place seam down in a baking dish.

-3 cups Water or Chicken broth

-2 cups Shredded Cheese

  2. Make a sauce of the soup, water or chicken broth, sage, oregano and green chiles. Let the sauce simmer for 30 minutes.
  3. To make the tacoritos: add beef, sauce and cheese to a flour tortilla and roll up like a burrito. Place seam down in a baking dish.
  4. Pour sauce over top and add cheese.
  5. Cover with foil and bake at 350 degrees for 30 minutes.
  6. Serve with lettuce, tomatoes and sour cream.

Instant Pot Cilantro Lime Rice

Who doesn’t love Cilantro Lime Rice? This is another thing I could eat daily! So simple… almost too simple 😉 Grab your Instant Pot and get ready!

Only a few ingredients and 20 minutes later you’ll have some delicious Chipotle copycat rice.

Turn the Instant Pot to Sauté. Allow it to heat up before adding the butter or oil. Add onion and garlic and saute for 2-3 minutes. Add the rice and saute for another 2 minutes.

Add the rest of the ingredients. Close the lid and turn the knob to sealing. Cook on HIGH pressure for 5 minutes. Allow a 10 minute natural pressure release before quickly releasing the pressure.

-2 Cups White Rice

-3 Cups Chicken Broth or water

-1/2 onion diced

-1 Tbsp lime zest

-1/2 tsp salt

-1/2 tsp pepper

-2 Tbsp butter or olive oil

 

Directions

  1. Turn Instant Pot to Sauté. Allow it to heat up before adding the butter or oil. Add onion and garlic and saute for 2-3 minutes. Add the rice and saute for another 2 minutes.
  2. Add the rest of the ingredients. Close the lid and turn the knob to sealing. Cook on HIGH pressure for 5 minutes. Allow a 10 minute natural pressure release before quickly releasing the pressure.
  3. Add more lime juice if needed.

Instant Pot Refried Beans

Another delicious and simple side to enjoy with your favorite Mexican dishes. Can be made in the Instant Pot or Slow Cooker.

Start out by soaking your beans for 6-8 hours.

Turn Instant Pot to “Sauté” mode. Add 2 Tbsp oil or butter to the pot and allow it to heat up. Saute the onions and garlic for 2-3 minutes. Add the rest of the ingredients to the Instant Pot.

Close the lid and cook on HIGH pressure for 60 minutes. When it’s finished, allow a natural pressure release before releasing the rest of the pressure.

Drain all but 1 cup of liquid from the beans and blend with an immersion blender or mash by hand. Add more liquid until you reach your desired consistency. Adjust seasonings as needed.

Instant Pot Refried Beans

  • Servings: 6

-2 Cups pinto beans

Instant Pot Mexican Rice

I could eat rice with every meal, literally! I love it! And making it in the Instant pot is so simple, I usually make rice 2-3 times per week. My kiddos love this “red rice” as they call it, and I think it tastes just like the rice you’d find at an authentic Mexican restaurant.

Grab your ingredients and seasonings.

Turn the Instant Pot to Saute mode and add 2 Tbsp of butter or oil. Allow it to heat up before adding the chopped onions and garlic.

When the timer is up, allow the ressure to release naturally for 10 minutes before quickly releasing the pressure. Stir your rice and enjoy! 🙂

Homemade Colorado Green Chili

One of my favorite things to eat- Mexican food. Specifically Green Chili and tortillas. I have played around with this recipe for a few years and this is the one I love the most. It can be made in the Instant Pot or Slow Cooker. But I prefer the Instant Pot, simply because it only takes 30 minutes. This recipe isn’t too spicy since I have two little mouths to feed, but still has a nice kick to it. My 7 year old calls it “Spicy Soup” haha!\

Start out by grabbing the Ingredients and  seasonings needed.

Note: You can substitute one can of Rotel for the tomatoes and 1 of the cans of green chiles, that’s what I had on hand.

Turn the Instant Pot to “Saute” and add 2 Tbsp of oil. Allow it to heat up and then Saute the Pork with the onion and garlic for 4-5 minutes until cooked through.

Add the rest of the ingredients except for the flour and butter, and stir.

Cook on HIGH pressure for 30 minutes. When the timer is up, quickly release the pressure and turn the pressure cooker back to “Saute”

Make and slurry using the melted butter and flour. Add the mixture to the green chili and allow it to simmer and thicken for 5-10 minutes.

  • Servings: 8
  • Difficulty: Easy

-2 lbs Pork diced

-5 Cups Chicken Broth

-1 yellow onion diced

-5 cloves garlic minced

-1 can diced tomoatoes drained (optional)

-2 cans diced green chiles

-1/4 tsp diced jalapenos (or more if you like it spicy)

-1 Tsp Salt

-1 Tsp Pepper

-1 Tsp Cumin

-1 Tsp Chili Powder

-1 Tsp Oregano

-1 Tsp Paprika

-pinch of cayenne pepper

-pinch of red pepper flakes

-2 Tbsp Oil

-2 Tbsp Butter

-2 Tbsp Flour

Directions

    1. Turn Instant Pot to “Sauté” mode. Add 2 Tbsp oil to the pot and allow it to heat up.
    2. Sauté pork with onion and garlic until cooked through. Add the rest of the ingredients to the Instant Pot.
    3. Close the lid and cook on HIGH pressure for 30 minutes. When it’s finished, quick release the pressure and turn it back to “Sauté” mode.
    4. Melt the butter and make a slurry with butter and flour and add to the green chili, this will help it thicken. Let the green chili simmer for 5-10 minutes.
    5. Serve over burritos or with tortillas. Yum! 😊 Enjoy with Instant Pot Refried Beans and Instant Pot Mexican Rice
  • If making this recipe in a slow cooker, add all of the ingredients to the crock pot except for the flour and butter, cook on high for 4 hours or low for 8 hours. Add the slurry at the end to thicken.
