Instant Pot Chicken Picatta


This has been my favorite dish for SO long! I just HAD to adapt the recipe for the Instant Pot. Simple, delicious and kid-friendly! 🙂

Which Instant Pot is best?

You can serve this dish over pasta like I did, or over rice or mashed potatoes. It would also be delicious by itself! 🙂

If you have two Instant Pots, you can prepare the pasta at the same time by following these directions: How to Cook Pasta in the Instant Pot

This jar of bouillon mix was on close out sale at our local Kroger so I decided to try it, it added so much flavor to the dish! I used it for the pasta as well and it was delicious!

Start out by Turning the Instant Pot to Sauté and allow it to heat up. Add 2 TBSP of oil or butter then add the garlic and sauté 2-3 minutes.

Season the chicken breasts with salt and pepper then add then add them to the Instant Pot and cook for 1-2 minutes on each side.

 

 

Add the chicken broth, lemon juice, lemon zest and capers to the Instant Pot.

Close the lid, turn the venting knob to sealing and Cook on HIGH pressure for 3 minutes. Quickly release the pressure when it’s finished cooking.

Remove the chicken and slice. Mix the cornstarch and water then add it to the pot. Add the heavy cream and parmesan cheese. Allow the sauce to thicken for 5 minutes.

Serve over Pasta, rice or mashed potatoes. YUM!!! 🙂

Ingredients

-1 lb thin sliced chicken breasts

-1/3 Cup lemon juice

-1 Tbsp lemon zest

-1/2 Cup chicken broth

-1/2 Cup heavy cream

-1/4 Cup capers

-3-4 cloves garlic minced

-1/4 Cup grated parmesan cheese

-1/2 tsp Sea salt

-1/2 tsp pepper

-2 TBSP olive oil or butter

-1 TBSP Corn starch mixed with 2 TBSP Cold water

-1 Cup sliced mushrooms (optional)

-shredded parmesan cheese for topping (optional)

Directions

  1. Turn the Instant Pot to Sauté and allow it to heat up. Add 2 TBSP of oil. Add the garlic and sauté 2-3 minutes.
  2. Season the chicken breasts with salt and pepper then add them to the Instant Pot and cook for 1-2 minutes on each side.
  3. Add the chicken broth, lemon juice, zest and capers.
  4. Close the lid, turn the venting knob to sealing and Cook on HIGH pressure for 3 minutes. Quickly release the pressure.
  5. Remove the chicken and slice, Turn the Instant pot back to Sauté, add the cornstarch/water, heavy cream, and parmesan cheese and stir. Allow the sauce to thicken for 5 minutes.
  6. Serve chicken and sauce over pasta or rice.

Instant Pot Chicken Alfredo

This is my favorite dish to make. My sons love it and it’s easy to prepare. I made an Instant Pot recipe to help save myself time. This recipe calls for one jar of Alfredo sauce, this is an easy and simple recipe to follow: Homemade Alfredo Sauce

Once you have prepared the Alfredo Sauce, you only need a few more ingredients.

Begin by seasoning the chicken with salt, pepper and italian seasoning. Put 1 Cup of water in the Instant Pot. Place the trivet in the pot. Place chicken on trivet. Cook on HIGH pressure for 10 minutes. When it’s finished, quickly release the pressure. Remove the chicken and slice.

 

 

If you have a second pot, you can cook the pasta and the chicken at the same time, or you can cook the pasta on the stove. To learn how to prepare pasta in the Instant Pot, read here: How to Cook Pasta in the Instant Pot

When the pasta is finished, you can steam broccoli in a steamer basket in the Instant Pot if you’d like. Add 1 Cup of water and cook on HIGH pressure for 2 minutes. Quickly release the pressure when finished.

Ingredients

 

-1-2 lbs chicken breasts

-1 lb steamed broccoli

-1 lb Cooked Pasta

-1 Jar Homemade Alfredo Sauce

-1 tsp Italian Seasoning

-1/2 tsp salt

-1/2 tsp pepper

 

Directions

  1. Season the chicken with salt, pepper and Italian seasoning. Put 1 Cup of water in the Instant Pot. Place the trivet in the pot. Place chicken on trivet. Cook on HIGH pressure for 10 minutes. When it’s finished, quickly release the pressure. Remove the chicken and slice.
  2. While the chicken is cooking, prepare the pasta on the stove or if you have a second Instant Pot, follow these instructions for How to cook Pasta in the Instant Pot.
  3. When the pasta is finished, Steam the broccoli in the Instant Pot using a steamer basket.Add 1 Cup of water and cook on HIGH pressure for 2 minutes. Quickly release the pressure when finished.
  4. Serve with jarred or Homemade Alfredo Sauce, over your favorite Pasta!

Homemade Alfredo Sauce

One of my absolute favorite sauces. It’s creamy and simple to make.

This recipe only calls for a few ingredients.

Start out by melting the 1/2 Cup of butter in a sauce pan. Add Garlic and sauté until fragrant (1-2 minutes.)

Add the heavy cream and seasonings and allow it to warm up.

Add the parmesan cheese and stir as it melts.

Simmer over low/medium heat for 5-10 minutes, stirring often.

Enjoy! Serve over your favorite pasta dishes.

Ingredients

-2 Cups heavy cream

-1 ½ Cups Parmesan Cheese

-1 (1/2 Cup) Stick butter

-3 cloves garlic minced

-1 tsp Italian Seasoning

-1/4 tsp salt

-1/4 tsp pepper

 

Directions

  1. Melt the butter in a saucepan. Add Garlic and sauté until fragrant (1-2 minutes) add the heavy cream and seasonings and allow it to heat up. Slowly stir in the parmesan cheese.
  2. Allow it to simmer over low-medium heat for 5-10 minutes, Stirring often.

 

Serve over your favorite Pasta!

How to Cook Pasta in the Instant Pot

Pasta is a quick and easy thing to cook in the Instant Pot! Pair it with some Homemade Instant Pot Pasta SauceInstant Pot Pasta Sauce and you’re set! 🙂

Start out by picking your favorite box of pasta. Pour it into the Instant Pot.

Add 3 Cups of water to the pot.

Close the lid and turn the knob to “sealing.” Cook on HIGH pressure for 5 minutes.

**The rule of thumb is half the time that is recommended on the box. TIP: add 1tbsp of olive oil to prevent the pasta from sticking together.

Quickly release the pressure.

Done! Serve your pasta with butter and cheese, or with some 5-Minute Meat Sauce or Instant Pot Pasta Sauce

  • Servings: 6

Ingredients

-1 pound pasta (1 Box)

-3 Cups Water or Chicken Broth (24oz)

-1 TBSP Olive oil

Directions

  1. Pour the pasta into the instant pot. Add the water or chicken broth.
  2. Put the lid on the pot, turn the knob to sealing.  TIP: add 1tbsp of olive oil to prevent the pasta from sticking together.
  3. Cook on HIGH pressure for 5 minutes. (Typically the rule is half the time that is recommended on the box.
  4. Quickly release the pressure. Serve pasta with butter and parmesan cheese or Homemade Pasta Sauce.

Instant Pot Creamy Pesto Chicken and Pasta


If you’re looking for a simple and delicious Instant Pot dinner that you can have on the table in 15 minutes, look no further! This Creamy Pesto dish has everything you need, and it’s kid approved! 🙂

Start by gathering your ingredients.

Dice and season your chicken breast with Italian Seasoning, salt and pepper.

Turn your Instant Pot to “Saute” mode and add 2 tbsp of butter or olive oil. Allow it to heat up and then add the diced chicken and saute until it is almost cooked through.

Add the pasta and the chicken broth or water and then cook on HIGH pressure for 5 minutes.

When the 5 minutes are up, quick release the pressure and turn the pot back to “Saute” mode.

Add the Pesto sauce, heavy cream, 2 tbsp butter or oil and the parmesan cheese and stir until your desired consistency is reached.

-1 Box Pasta of your choice

-1/4 Cup Heavy Cream

-3-4 Tbsp Butter or Olive Oil

Directions

1.Dice Chicken Breast and season with Italian seasoning and salt/pepper. . Turn Instant      Pot to “Sauté” mode. Add 2 Tbsp of butter or oil to the pot and allow it to heat up.

  1. Sauté chicken breast until almost cooked. Add the pasta and the water or chicken broth.
  2. Close the lid and cook on HIGH pressure for 5 minutes. When it’s finished, quick release the pressure and turn it back to “Sauté” mode.
  3. Add the pesto sauce, heavy cream, 2 Tbsp of butter or oil, and parmesan cheese and stir until desired consistency is reached. Season with salt and pepper to taste.
