Instant Pot Creamy Tomato Basil Soup

Who doesn’t love Tomato soup? It’s been raining all day here in Colorado and this was the perfect way to warm us up! We made grilled cheese sandwiches to go with and my sons absolutely loved it! It’s super easy to make too which is always a plus! Grab your Instant Pot and let’s get started.

Which Instant Pot is best?

Instant Pot 101: Tips, Tricks and Must-Have Accessories.

You only need a few ingredients for this dish:

Dice onion and chop garlic. Turn the Instant Pot to sauté and allow it to heat up. Add 2 TBSP of oil to the pot. Then add the onion and garlic and sauté 2-3 minutes until fragrant.

Add the rest of the ingredients except for the heavy cream to the pot and stir.

Close the lid, turn the venting knob to sealing and cook on HIGH pressure for 15 minutes. When it’s finished cooking, quickly release the pressure.

Blend with an immersion blender, I love mine! Then add the heavy cream and stir.

Serve with a grilled cheese sandwich, and enjoy! YUM! 🙂

-1/2 onion diced

-1 TBSP dried Basil

-1 tsp Italian seasoning 

-3 cloves garlic minced

-2 Cups chicken broth or water

-1 tsp salt

-1/2 tsp pepper

-2 TBSP olive oil

-Parmesan cheese for garnish- optional

Directions

  1. Dice onion and chop garlic.

Instant Pot Meatloaf and Garlic Mashed Potatoes

Anytime that I can get Hayden (my 7 year old) to eat red meat (beef, pork etc) is a win for me! Anytime I’ve made meatloaf before, he’s hated it and since he loves everything I make in the Instant Pot, I decided to give it a shot! Well, it was a HUGE success… the only problem? I didn’t make enough, apparently. haha!

Which Instant Pot is best?

Okay okay, this is a relatively easy dinner to prepare, so I had my sons help me out! Grab your ingredients and let’s go!

Start by washing, peeling and dicing the potatoes. Place them in the Instant Pot. Add the chicken broth, butter, salt, pepper and onion/garlic.

Mix the ingredients for the meatloaf together. Spray your pyrex dishes or 7-inch springform pan with non-stick cooking spray.

Add the meatloaf to the dishes or pan.

Mix the ingredients for the meatloaf sauce and then spoon the sauce over top.

You can make this all in one pot by placing the trivet on top of the mashed potatoes and then placing your dishes or springform pan on top. You can also cook them separately if you have two Instant Pots.

If you are making the meatloaf and potatoes separately: add 1 cup of water to the bottom of the pot and place your dishes or springform pan on the trivet inside the pot. Cook for the same amount of time.

If you’re making the meatloaf and potatoes in the same pot: Close the lid, adjust the venting knob to “Sealing” and cook on HIGH pressure for 20 minutes. Quickly release the pressure and remove the meatloaf.

Mash the potatoes and add more butter, heavy cream and cheddar cheese if you’d like.

A simple and delicious Instant Pot version of this delicious meal.

Ingredients

For the Meatloaf:

-2 lbs ground beef

-1/3 Cup onion diced

-1 Tbsp milk or heavy cream

-2 Tbsp steak sauce

-1 Tbsp Worcestershire sauce

-1/3 Cup bread crumbs

-2 eggs

-1/2 tsp salt

-1/2 tsp pepper

For the Meatloaf sauce:

-1/2 Cup ketchup

-3 Tbsp Worcestershire sauce

-2 Tbsp brown sugar

For the Garlic Mashed Potatoes:

-3lbs potatoes washed, peeled and diced

-2-3 tbsp butter

-3/4 Cup chicken broth

-1/3 Cup milk or heavy cream

-1/4 Cup onion diced

-2-3 cloves garlic minced

-1/2 tsp salt

-1/2tsp pepper

-1/2 Cup shredded cheddar cheese (optional)

Directions

Instant Pot Chicken Picatta


This has been my favorite dish for SO long! I just HAD to adapt the recipe for the Instant Pot. Simple, delicious and kid-friendly! 🙂

Which Instant Pot is best?

You can serve this dish over pasta like I did, or over rice or mashed potatoes. It would also be delicious by itself! 🙂

If you have two Instant Pots, you can prepare the pasta at the same time by following these directions: How to Cook Pasta in the Instant Pot

Grab your ingredients, and let’s get started! 🙂

This jar of bouillon mix was on close out sale at our local Kroger so I decided to try it, it added so much flavor to the dish! I used it for the pasta as well and it was delicious!

Start out by Turning the Instant Pot to Sauté and allow it to heat up. Add 2 TBSP of oil or butter then add the garlic and sauté 2-3 minutes.

Season the chicken breasts with salt and pepper then add then add them to the Instant Pot and cook for 1-2 minutes on each side.

 

 

Add the chicken broth, lemon juice, lemon zest and capers to the Instant Pot.

Close the lid, turn the venting knob to sealing and Cook on HIGH pressure for 3 minutes. Quickly release the pressure when it’s finished cooking.

Remove the chicken and slice. Mix the cornstarch and water then add it to the pot. Add the heavy cream and parmesan cheese. Allow the sauce to thicken for 5 minutes.

Serve over Pasta, rice or mashed potatoes. YUM!!! 🙂

-1 lb thin sliced chicken breasts

-1/3 Cup lemon juice

-1 Tbsp lemon zest

-1/2 Cup chicken broth

-1/2 Cup heavy cream

-1/4 Cup capers

-3-4 cloves garlic minced

-1/4 Cup grated parmesan cheese

-1/2 tsp Sea salt

-1/2 tsp pepper

-2 TBSP olive oil or butter

-1 TBSP Corn starch mixed with 2 TBSP Cold water

-1 Cup sliced mushrooms (optional)

-shredded parmesan cheese for topping (optional)

Directions

  1. Turn the Instant Pot to Sauté and allow it to heat up. Add 2 TBSP of oil. Add the garlic and sauté 2-3 minutes.
  2. Season the chicken breasts with salt and pepper then add them to the Instant Pot and cook for 1-2 minutes on each side.
  3. Add the chicken broth, lemon juice, zest and capers.
  4. Close the lid, turn the venting knob to sealing and Cook on HIGH pressure for 3 minutes. Quickly release the pressure.
  5. Remove the chicken and slice, Turn the Instant pot back to Sauté, add the cornstarch/water, heavy cream, and parmesan cheese and stir. Allow the sauce to thicken for 5 minutes.
  6. Serve chicken and sauce over pasta or rice.

Instant Pot Fiesta Taco Pasta

Another simple, delicious and Kid-Approved Instant Pot meal! Such a good feeling when the kids love what you make… and the Instant Pot makes that easy for me! This recipe has just enough spice, and is packed full of protein! YUM!

Get ready for a super fast meal! 🙂 Here’s what you’ll need:

Start by turning the Instant Pot to Sauté and allowing it to heat up. Add 2 TBSP of oil. Add onion and garlic and sauté for 2-3 minutes.

Pick your favorite meat, because the meat in this recipe can be substituted so easily! Ground beef, turkey or chicken works! Add 1 lb of your meat of choice to the pot and brown it. Drain the grease if necessary.

-1 can black beans

-1 can Rotel (or 1 can tomatoes and 1 can diced green chiles)

-1 can olives

-1 can corn (optional)

-1-2 cups shredded cheese

-2 TBSP olive oil

 

Seasonings:

-1/2 tsp Sea salt

-1/2 tsp pepper

-1 tsp chili powder

-1 tsp cumin

-1 tsp oregano

-1/2 tsp paprika

-1/2 tsp onion powder

-1/4 tsp cilantro leaves

-pinch of cayenne pepper (optional)

Directions

1.Turn the Instant Pot to Sauté and allow it to heat up. Add 2 TBSP of oil. Add onion and garlic and sauté 2-3 minutes.

Cinnamon Chocolate Chip Banana Bread With Dulce de Leche

Oh my gosh!! I’ve never tasted anything like this… A delicious spin on a favorite treat! I have made it in the Instant Pot and in the oven and it is simply incredible either way! If you’ve never heard of the Instant Pot, start here: Instant Pot 101: Tips, Tricks and Must-Have Accessories.

If you’ve never heard of Dulce de Leche it’s a delicious caramel-like sauce that can be served with desserts… or eaten with a spoon, haha!! It’s so tasty, so I decided to add it to my banana bread recipe and it turned out amazing!

 

Grab your ingredients, and let’s get started!

Start out by sifting the flour, salt, cinnamon and baking soda. Set aside.

 

 

Using a Mixer, Beat the butter and two kinds of sugar until smooth.

Add the mashed bananas, yogurt, vanilla, eggs and mix. Then slowly add the dry ingredients and mix well.

Fold in the chocolate chips.

Spray a 7-inch springform pan with non-stick cooking spray. Pour batter into the pan. Add Dulce de Leche to the top along with another handful of chocolate chips.

For the Instant Pot: Add 1 Cup of water to the Instant Pot.  Cover springform pan with foil, place on trivet and lower into the Instant Pot. Cook on HIGH pressure for 60 minutes. Allow a 10 minute natural pressure release before quickly releasing the pressure.

 

For the oven: Bake at 350 degrees for 55-60 minutes or until a toothpick inserted in the center comes out clean. Allow it to cool completely before cutting.

Serve and enjoy!

A simple and delicious way to prepare this dessert. Includes an Instant Pot recipe as well as an oven recipe.

Ingredients

-2 Cups Flour

-pinch of salt

-1 1/2tsp baking soda

-1 tsp cinnamon

-1/2 Cup white sugar

-1/2 Cup brown sugar

-1/2 Cup butter (1 stick) room temperature

-1/4 Cup Dulce de Leche

-1/4 Yogurt or sour cream

-1 tsp vanilla

-2 eggs

-2 mashed bananas

-1/2 Cup chocolate chips

Directions

Instant Pot Dulce de Leche

As if the Instant Pot wasn’t cool enough already, I recently discovered that it’s possible to make Dulce de Leche in the pot. And it’s SO simple!

If you’ve never heard of the Instant Pot start here: Instant Pot 101

Check out what happens:

This turns condensed milk into creamy, caramel-like deliciousness! 🙂

It’s so easy.

Grab your Instant Pot and place the trivet inside. Put the can on the trivet and then cover it with water. **NOTE: you can also pour the can of condensed milk into a small mason jar, put the lid on and prepare it the same way.

Cook on HIGH pressure for 30 minutes. Quickly release the pressure and then allow it to cool before handling.

Serve over ice cream, with yogurt, on a graham cracker, in any dessert, and of course, with Cinnamon Chocolate Chip Banana Bread with Dulce de Leche.

Directions

  1. Place trivet in the Instant Pot. Put can on trivet and cover with water. **You can also pour the condensed milk into a mason jar, secure the lid and prepare it that way.
  2. Cook on HIGH pressure for 30 minutes. Allow it to cool completely before use.
  3. Serve over your favorite desserts or in some Instant Pot Chocolate Chip Banana Bread with Dulce de Leche.

Oh my goodness! You HAVE to try this Instant Pot recipe! It’s super simple and absolutely delicous! It’s kid approved! And I  am using this recipe to wow my parents tonight with their first Instant Pot experience! 🙂

-8-10 lasagna noodles broken up

-1 Jar of Homemade pasta sauce (24 oz)

-3 Cups water or chicken broth

-1/2 onion chopped

-1 can diced tomatoes

-1 Cup shredded parmesan cheese

-1 Cup shredded mozzarella cheese

-1/2 tsp Sea salt

-1/2 tsp pepper

-1 TBSP Italian Seasoning

-1 TBSP olive oil

Directions

1.Turn the Instant Pot to Sauté and allow it to heat up. Add 2 TBSP of oil. Add onion and garlic and sauté 2-3 minutes.

2.Add ground beef or Italian sausage and brown. Drain grease.

Instant Pot Cilantro Lime Rice

Who doesn’t love Cilantro Lime Rice? This is another thing I could eat daily! So simple… almost too simple 😉 Grab your Instant Pot and get ready!

Only a few ingredients and 20 minutes later you’ll have some delicious Chipotle copycat rice.

Turn the Instant Pot to Sauté. Allow it to heat up before adding the butter or oil. Add onion and garlic and saute for 2-3 minutes. Add the rice and saute for another 2 minutes.

Instant Pot Chicken Alfredo

This is my favorite dish to make. My sons love it and it’s easy to prepare. I made an Instant Pot recipe to help save myself time. This recipe calls for one jar of Alfredo sauce, this is an easy and simple recipe to follow: Homemade Alfredo Sauce

Once you have prepared the Alfredo Sauce, you only need a few more ingredients.

Begin by seasoning the chicken with salt, pepper and italian seasoning. Put 1 Cup of water in the Instant Pot. Place the trivet in the pot. Place chicken on trivet. Cook on HIGH pressure for 10 minutes. When it’s finished, quickly release the pressure. Remove the chicken and slice.

 

 

If you have a second pot, you can cook the pasta and the chicken at the same time, or you can cook the pasta on the stove. To learn how to prepare pasta in the Instant Pot, read here: How to Cook Pasta in the Instant Pot

When the pasta is finished, you can steam broccoli in a steamer basket in the Instant Pot if you’d like. Add 1 Cup of water and cook on HIGH pressure for 2 minutes. Quickly release the pressure when finished.

A delicious Instant Pot version of this family favorite!

Ingredients

 

-1-2 lbs chicken breasts

-1 lb steamed broccoli

-1 lb Cooked Pasta

-1 Jar Homemade Alfredo Sauce

-1 tsp Italian Seasoning

-1/2 tsp salt

-1/2 tsp pepper

 

Directions

  1. Season the chicken with salt, pepper and Italian seasoning. Put 1 Cup of water in the Instant Pot. Place the trivet in the pot. Place chicken on trivet. Cook on HIGH pressure for 10 minutes. When it’s finished, quickly release the pressure. Remove the chicken and slice.
  2. While the chicken is cooking, prepare the pasta on the stove or if you have a second Instant Pot, follow these instructions for How to cook Pasta in the Instant Pot.
  3. When the pasta is finished, Steam the broccoli in the Instant Pot using a steamer basket.Add 1 Cup of water and cook on HIGH pressure for 2 minutes. Quickly release the pressure when finished.
  4. Serve with jarred or Homemade Alfredo Sauce, over your favorite Pasta!

Instant Pot Pasta Sauce

5-Minute Meat Sauce

I’m Italian, so of course Pasta Sauce was one of the first things I learned how to make from scratch. This is a weekly dinner for us, and sometimes lunch too! haha. This recipe includes instructions for the Instant Pot as well as the Slow Cooker.Grab the ingredients needed and let’s get started.

Start out by chopping the onion and garlic. Start by chopping the onion and garlic. Turn the Instant Pot to sauté mode. Add the olive oil when the pot is hot. Sauté the onion and garlic for 2-3 minutes.

Add the rest of the ingredients and stir.

Fresh tomatoes are always better, of course… but you can use diced tomatoes too! If using fresh tomatoes, add 3 cups of water.Close the lid and turn the knob to sealing. Cook on HIGH pressure for 10 minutes.

When the timer is up, quickly release the pressure and remove the lid.

-4 15oz cans diced tomatoes. (or 8 cups fresh tomatoes diced) -2 Tbsp olive oil -3 cups water (only if using fresh tomatoes) -1 onion diced -5 cloves garlic minced -1 ½ TBSP Italian Seasoning -1 tsp salt -1 tsp pepper -1 tsp sugar -pinch of red pepper flakes

Directions

    1. Start by chopping the onion and garlic. Turn the Instant Pot to sauté mode. Add the olive oil when the pot is hot. Sauté the onion and garlic for 2-3 minutes.
    2. Add the rest of the ingredients and stir. Close the lid and turn the knob to sealing. Cook on HIGH pressure for 10 minutes.
    3. Quickly release the pressure. Blend with an immersion blender. Adjust the seasonings if needed.
    4. Enjoy over your favorite pasta! 😊 YUM!!!!
