Green Chile Chicken Soup

This soup recipe could not be more simple! It can be prepared in the Instant Pot or Slow Cooker. Don’t you just love a recipe that you can “dump and cook,” as in, dump all of your ingredients, set it and forget it! That’s one of the many reasons I love cooking in my Instant Pot!

Which Instant Pot is Best?

Instant Pot 101

Grab the ingredients you’ll need and get ready for a super simple and delicious dinner!

For the seasonings you’ll need:

-2 tsp Cumin

-2 tsp Oregano

-1 tsp Chili Powder

-1/2 tsp Salt

-1/2 tsp Black Pepper

Chop the onion and garlic.

Drain and rinse your beans. If you haven’t heard of hominy, you can find it in the canned vegetable aisle at your local grocery store! You can substitute any other kind of bean if you’d like as well! This is what Hominy looks like:

Add all of the ingredients to the Instant Pot except for the cilantro and lime juice. Stir.

Close the lid, turn the venting knob to “sealing” and cook on HIGH pressure for 20 minutes. Allow the pressure to release naturally, this can take anywhere from 15-45 minutes. You will know that the pressure has released completely when the silver pin has dropped. Carefully open the lid.

Remove the chicken and shred, then return it to the pot. Add the cilantro and juice of 1/2 of a lime and stir. Top with avocado and tortilla strips and enjoy!

Remove the chicken and shred, then return it to the slow cooker. Add the cilantro and juice of 1/2 of a lime and stir. Top with avocado and tortilla strips and enjoy!

5-Minute Meat Sauce

This is a simple meat sauce to serve with pasta, it can be made in the Instant Pot or Slow Cooker.

Grab your favorite Instant Pot Pasta Sauce or jarred sauce and get ready!

Turn the Instant Pot to sauté mode. Add olive oil when the pot is hot. Sauté the Italian sausage until brown.

Pour the sauce over the meat and stir.

Close the lid and turn the knob to sealing. Cook on HIGH pressure for 5 minutes. When the timer is up, Quickly release the pressure.

I’m Italian, so of course Pasta Sauce was one of the first things I learned how to make from scratch. This is a weekly dinner for us, and sometimes lunch too! haha. This recipe includes instructions for the Instant Pot as well as the Slow Cooker.Grab the ingredients needed and let’s get started.

Start out by chopping the onion and garlic. Start by chopping the onion and garlic. Turn the Instant Pot to sauté mode. Add the olive oil when the pot is hot. Sauté the onion and garlic for 2-3 minutes.

Fresh tomatoes are always better, of course… but you can use diced tomatoes too! If using fresh tomatoes, add 3 cups of water.Close the lid and turn the knob to sealing. Cook on HIGH pressure for 10 minutes.

-4 15oz cans diced tomatoes. (or 8 cups fresh tomatoes diced) -2 Tbsp olive oil -3 cups water (only if using fresh tomatoes) -1 onion diced -5 cloves garlic minced -1 ½ TBSP Italian Seasoning -1 tsp salt -1 tsp pepper -1 tsp sugar -pinch of red pepper flakes

Directions

Homemade Colorado Green Chili

One of my favorite things to eat- Mexican food. Specifically Green Chili and tortillas. I have played around with this recipe for a few years and this is the one I love the most. It can be made in the Instant Pot or Slow Cooker. But I prefer the Instant Pot, simply because it only takes 30 minutes. This recipe isn’t too spicy since I have two little mouths to feed, but still has a nice kick to it. My 7 year old calls it “Spicy Soup” haha!\

Start out by grabbing the Ingredients and  seasonings needed.

Note: You can substitute one can of Rotel for the tomatoes and 1 of the cans of green chiles, that’s what I had on hand.

Turn the Instant Pot to “Saute” and add 2 Tbsp of oil. Allow it to heat up and then Saute the Pork with the onion and garlic for 4-5 minutes until cooked through.

Add the rest of the ingredients except for the flour and butter, and stir.

Cook on HIGH pressure for 30 minutes. When the timer is up, quickly release the pressure and turn the pressure cooker back to “Saute”

Make and slurry using the melted butter and flour. Add the mixture to the green chili and allow it to simmer and thicken for 5-10 minutes.

YUM! Enjoy over burritos or just eat it with tortillas! Enjoy with Instant Pot Refried Beans and Instant Pot Mexican Rice 🙂

Ingredients

-2 lbs Pork diced

-5 Cups Chicken Broth

-1 yellow onion diced

-5 cloves garlic minced

-1 can diced tomoatoes drained (optional)

-2 cans diced green chiles

-1/4 tsp diced jalapenos (or more if you like it spicy)

-1 Tsp Salt

-1 Tsp Pepper

-1 Tsp Cumin

-1 Tsp Chili Powder

-1 Tsp Oregano

-1 Tsp Paprika

-pinch of cayenne pepper

-pinch of red pepper flakes

-2 Tbsp Oil

-2 Tbsp Butter

-2 Tbsp Flour

Directions

    1. Turn Instant Pot to “Sauté” mode. Add 2 Tbsp oil to the pot and allow it to heat up.
    2. Sauté pork with onion and garlic until cooked through. Add the rest of the ingredients to the Instant Pot.
    3. Close the lid and cook on HIGH pressure for 30 minutes. When it’s finished, quick release the pressure and turn it back to “Sauté” mode.
    4. Melt the butter and make a slurry with butter and flour and add to the green chili, this will help it thicken. Let the green chili simmer for 5-10 minutes.
    5. Serve over burritos or with tortillas. Yum! 😊 Enjoy with Instant Pot Refried Beans and Instant Pot Mexican Rice
  • If making this recipe in a slow cooker, add all of the ingredients to the crock pot except for the flour and butter, cook on high for 4 hours or low for 8 hours. Add the slurry at the end to thicken.

Homemade Applesauce

Who doesn’t love applesauce? My kids are obsessed with it and I love that I can make it at home without all the added sugar. This recipe can be made in an Instant Pot or in a Slow Cooker. 🙂

Start out by gathering your ingredients and washing the apples.

Peel the apples using an Apple Peeler and Corer or by hand. I absolutely love my peeler, it saves so much time!!!!

Add the remaining ingredients and mix.

For the Instant Pot: cook on HIGH pressure for 5 minutes and then allow a 10 minute natural pressure release before manually releasing the pressure. For the SSlow Cooker: Cook on HIGH for 3-4 hours or LOW for 6-8 hours until the apples are soft.

Perfect! 🙂 Your kitchen should now smell amazing, and you can blend the apples with an Immersion Blender or mash by hand.

Enjoy! You can store your applesauce in a Small Mason Jar a Small Pyrex Dish or Disposable Popsicle/Yogurt Tubes.

-10-12 Gala Apples

-1 Tsp Cinnamon or 1 Cinnamon Stick

-2 TBSP Agave or Honey

-1 Cup water

-2 TBSP Sugar (Optional)

Directions

  2. Add all of the ingredients to your Instant Pot or Slow Cooker and mix.
  3. For the Instant Pot: cook on HIGH pressure for 5 minutes and then allow a 10 minute natural pressure release before manually releasing the pressure. Blend with an immersion blender or mash by hand.
  4. For the Slow Cooker: Cook on HIGH for 3-4 hours or LOW for 6-8 hours until the apples are soft. Blend with an immersion blender or mash by hand.
  5. Allow the applesauce to cool and then Enjoy! Store in Disposable Popsicle/Yogurt Tubes or a Small Mason Jar. 😊
