A simple and flavor packed side dish made in the Instant Pot.
Turn the Instant Pot to Saute mode and allow it to heat up before adding the olive oil.
Add the diced onions and garlic and cook for 3-4 minutes before adding the rinsed quinoa, diced green chiles, tomatoes, beans, chicken broth and seasonings. Stir well.
Close the lid, turn the venting knob to sealing and cook at high pressure for 1 minute. When the timer is up, allow the pressure to release naturally for 10 minutes before releasing the rest of the pressure.
Fluff the quinoa with a fork, add lime juice, cilantro and green onions then serve.
