Air Fryer Avocado Egg Rolls

A healthy and delicious snack made in the Air Fryer.

Ingredients

Avocado Egg Rolls

  • 3 Avocados peeled and diced
  • 8-10 Grape Tomatoes chopped
  • 1/4 Cup Red Onion diced
  • 2 cloves Garlic minced
  • 1/4 Cup Cilantro chopped
  • 3 TBSP Lime juice
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Cumin
  • 1/2 tsp Chili Powder
  • 12 Egg roll wrappers

Cilantro Lime Sauce

  • 1/4 Cup Cilantro chopped
  • 1/2 Cup Honey
  • 1/4 Cup Olive Oil
  • 2 TBSP Lime Juice
  • 2 Cloves Garlic minced
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper

Sweet Chili Lime Sauce

  • 1/4 Cup Cold Water
  • 1/4 Cup Lime Juice
  • 1 tsp Siracha
  • 1 tsp Red Chili Flakes
  • 1 TBSP Cornstarch
  • 2 Cloves Garlic Minced
  • 1 tsp Salt
  • 1/2 Cup Sugar

Instructions

To Prepare the Egg Rolls:

  1. Chop all of the ingredients and combine in a bowl. Mix well.

  2. Add about two tablespoons of the avocado mixture to the corner of an egg roll wrapper.

  3. Fold corner over the filling and roll the egg roll once.

  4. Fold each side in and continue rolling the egg roll.

  5. Dab the final corner with water so that it seals.

  6. Repeat until all of the egg rolls are filled.

  7. Preheat the Air Fryer to 350 degrees for 5 minutes before adding the egg rolls. Spray each egg roll with olive oil.

  8. Cook at 350 degrees for 8-10 minutes turning half way.

To prepare the sauces:

  1. Mix all of the ingredients together then serve with the egg rolls.
